25.01.2022 For the last two weeks, I’ve not posted much on all the Jacican socials. I didn’t really have anything to say, so I didn’t say anything. I’ve been spending my time cooking things for BM, doing a bit of renovating for when we re-open, and as the time of year calls for it, a lot of gardening. And the support and orders, I’ve had for my Victorian Country Market stall has been fantastic. https://viccountrymarket.com.au/stall/jacican-mirboo-north... I’ve been in the kitchen working on a couple of new products to add to my stall. Think all-natural fruit pastille and 100sn1000s covered aniseed gums. Once packaging is done, they will be up on the stall. For the time being, there are Jacican sticks, my Rhubarb and Orange jam and the most popular relish I have Curried Zucchini relish. Speaking of re-opening, due to social distancing regulations that I have to follow at Jacican when I re-open, it will only be for private groups. If all goes well, Jacican should be back up and running from the end of November. I’m waiting to then as BM and myself are part way through a significant outdoor dining renovation and it will take until then to be finished. (I don’t wait to put any WIFE pressure on BM to make it go faster). Anyway, if you need anything, or just need a chat, feel free to reach out. Ive made three different flavours. Raspberry sticks; made from raspberries with no artificial colours or flavours.... A mix of Jacican sticks; all the family favourites musk, bubble-gum, peppermint, lime, lemon And a new flavour; Lemon, lime and bitters and Gin and tonic sticks. They are slightly fizzy, just like a real LLB or GnT. There arent many packages, so you will have to be fast if you want one! See you all in the kitchen soon! 24.01.2022 Brussels Sprouts Over the last 12 years in #mirboonorth each year Ive tried to grown #brusselssprouts This year I succeeded, with a small crop - enough to feed me and BM - to get us through winter. Alice Zaslavsky share a recipe on News Breakfast, so tonight I roasted them in Hill Top Hives honey, soy and a little olive for 15 minutes at 220C for dinner!!... All I can say is #yum An upside of being closed is that we have to sacrifice ourselves and eat what we grow in the garden. normally anything we grow would be shared in a harvest lunch. We are waiting until this over, them its back to sharing with everyone! Jaci

23.01.2022 Did you know that you can buy directly from the Jacican website? https://www.jacican.com.au/shop/preserves I’ve put together a collection of my most popular preserves. The only thing is I make limited batches of each preserve, so once the preserve runs out, I will change it out for a different preserve. ... If I run out of something, we all have to wait until the next growing season, for me to make more. Each box will contain one jam, one relish and one chutney. Currently, the gift box contains Rhubarb and Orange Jam, Curried Zucchini Relish and Tomato Chutney. Jaci



23.01.2022 Today BM and I drove around delivering the Gippsland orders of Jacican sticks. Thank you all for your overwhelming support. Because there were so many orders within driving distance of Mirboo North, I have refunded your postage charge on the orders delivered. A couple of orders went out in the post to the city (if you need a tracking number, ask). ... It was the first time I have sold Jacican sticks online. For orders going forward from now, I will: Process my online orders on Mondays And post out or deliver by Wednesday I hope this let you know what I am doing, that things are always on there way, as well as give me scheduled days to do stuff. 19.01.2022 I cant really think of anything to say at the moment. I feel a bit like Im in a holding pattern each day; get up, talk to BM, hang out with BM, try not to eat too much, not bake anything so I dont eat too much, if theres gym go to a class, sit at my computer and stare at the screen, go to bed. I am hoping to get Jacican back up with a new class in August, with something we havent done before, pruning fruit trees with myself, BM and our garden helper.... 17.01.2022 I grew up on a dairy farm in Gippsland outside the town of Loch. As a young girl, I would read the cookbooks that mum kept in the bottom kitchen drawer. As there was always flour, butter, milk, and eggs in the house, I was continuously searching for new recipes to bake. As a girl, I would make spend my weekends baking puff pastry to make tarts, creating new versions of candies and baking all the colour rainbow cakes. Not much has changed - have you seen my IG feed - Im still... searching for recipes that I can cook using what I have on hand or growing in the kitchen garden. At the age of about 16, I remember stating that I wanted to leave the farm and travel the world. I had the idea that I would become a television technician and work on sporting events (which I did). This would be followed by retiring by about 30 and moving back to Gippsland to grow vegetables and cook. From 16, fast forward 20 years, I returned, starting Jacican Food Studio in Mirboo North, Gippsland where I grow vegetables and cook. Before returning to Gippsland, I re-trained as a chef, completing my certificate of commercial cookery. This led me to work in catering, large and small hotels and small businesses, both in Melbourne and Gippsland before starting Jacican. In 2014, I completed my Bachelor of Business and Commerce from Monash University. To follow my passion for sharing Gippsland stories, its produce, farmers and people in 2020, I started a Graduate Diploma in Journalism at RMIT University. I love helping others follow their food dreams (just like I have) and have a wealth of knowledge, resources and networks available to be shared!

Originally I said it would take me at least a week to make the next in Hardie Grant Books #patisserie #cookbook As I have only got as far as the almond sponge layer, it will take a while to complete the dessert. Now that I am grownup, I can cook what I want, using any type of milk. How happy was I when Gippsland Jersey started producing buttermilk? I now use that in everything I bake. But I am going to start you off with a simple buttermilk recipe, pancakes. We all need to know how to make pancakes from scratch. This recipe will be with you forever. This recipe will make a dozen 10 cm fluffy pancakes Buttermilk pancakes recipe 2 cups of Oak & Swan stone ground wholemeal flour 2 teaspoons of baking powder 2 eggs 2 cups of GJ buttermilk 2 tablespoons of GJ butter Method If you havent noticed its same measurement of all the ingredients in this recipe, hence it is easy to remember forever; 1 part to 1 part to 1 part to 1 part. 1. Into a bowl, sift together flour and baking powder. 2. Make a hole in the middle of the flour and crack in the eggs. Pour over the buttermilk. 3. Beat together until smooth. 4. Heat a little of the butter until foaming in a frying pan. Add two spoonful of pancake batter. Swirl around into a round shape. 5. Cook for 2 to 3 minutes until firm enough to flip. Then cook for 1 to 2 minutes. 6. Serve warm I had mine with topped with berries I saved frozen from the summer, warmed homemade berry jam and whipped Crme Fraiche. #yum

13.01.2022 It been a while!! Things have slowed right down here. Ive been spending a lot of time at my desk. Studying a couple days a week, an internship and a little bit of helping other following their business dreams through mentoring. Like everyone, sometimes I get sick of all the zooming!! ... Theres been a lot of cooking. To keep BM feed theres pumpkin pie and Jerusalem artichokes tart on it way out of the kitchen. I did make musk sticks to finally, after 8 years, to get the Jacican online shop up. But there is a little hold up in IT. Its in the very capable hands of BM and well be online very soon. Question: I have a couple of spots that need ground cover or low shrubs or bushes. Do you have any ideas of things I could plant? 12.01.2022 Strawberry tart! This is why I do what I do. Why I moved to Mirboo North 12 years ago to grow vegetables (and fruit), cook and share it with you. To make a fresh strawberry tart from the fruit, I grew and lovely picked. Next weekend cooking classes are returning after an 8-month break, and there is a possibility that this may be (more likely BM has sampled this one and I’ve made a new one) the cake served for afternoon tea! To celebrate the launch of my range of Jacican preserves as a gift pack, I will share the love from some of my fellow Gippsland producers in the Victorian Country Market. * Jacican preserve giftpack ... A box of one jam, one relish and one chutney. Today, the gift box contains Rhubarb and Orange Jam, Curried zucchini relish and Sweet Black Tomato Chutney. * Gippsland Jersey Premium Un-Homogenised Milk & Cultured Butter In unhomogenised milk, the cream will rise to the top when it stands for any length of time. Such milk is also widely regarded as more flavoursome but can go sour more rapidly. I use it to make ricotta and I’m thinking of instant ice-cream. Their cultured butter can be used for everything! * Flooding Creek Fungi, Mixed mushroom punnet 300 grams I can’t get enough of these mushrooms. I seem to be ordering them every second week! I’m using a 300 gram for dinner regularly. So far, I’ve fried them, cook in a soup based, roasted in the oven. They go great with the GJ butter! * Purely Goats Milk soaps - Lemongrass Before you start cooking everything, you will need to wash your hands. You can find goats soap on all the handwashing sink at Jacican! * Forge Creek Free Range 1 dozen free-range eggs You need eggs to cook most things. My little chickens keep me in enough eggs (but I don’t sell them), so sharing the love of someone else eggs! 05.01.2022 What a wonderful spring day! I spent most of it in the garden with BM. We have been working on getting everything up to scratch for when cooking classes return to Jacican. I know that from tomorrow we can open back up, but for us it still means that we can only fit 4 guests inside. ... Yes you say, you can have up to 50 outdoors! But just because you can doesnt mean you should. We are going to hang out a while longer. We are working on an upgraded of the outdoor kitchen in the next couple of weeks. The food studio is changing a little bit too. There is work on the entrance happening soon, maybe a bit of painting going on, a couple new pot plants. 03.01.2022 You dig one spade and you end up with a full bucket of Jerusalem artichokes. The only thing is if you eat too many, they may cause you to create wind. Today I made BM a tart. A recipe from Stephanie Alexander classic The cooks companion. I did change the recipe a little bit. It was too far to walk to the wild green bed, so I forgot the herbs and used a bit of Ive grew all by myself kale from the backdoor.... Luckily, the have started to lay after winter, so there is plenty of. And yes I made the pastry from scratch as well. Whats your #stayathome baking?

02.01.2022 Im still working on the caramel dessert in Hardie Grant Books #patisserie Today its the chablon layer. The chablon is a thin dark chocolate layer on the bottom of of the sponge cake, that seperates the dessert from the plate it sits on.

The one thing is though, the weeds never seem to go away. So, I have come up with a way to deal with them Eat them! There is always an assortment of greens growing wild in my kitchen garden kale, nasturtiums, rocket and this year s...elf-seeded red leaf lettuce has lined the patch around the citrus tree all by itself. I am always cooking blanched and braised green. I do love mine braised with white wine, seasoned with a little salt and pepper and finished with some cream. I'm going to get back out in the garden and see what weediness I can find.

01.01.2022 Do you want to make a trade?? Its taken me a while, but Ive finally finished the Caramel Dessert. I am going to swap it for something! If you have anything you think I would like to swap this Caramel Dessert for suggested in the comments. I will be sharing this around all the Jacican socials and will pick the thing to swap randomly.... We can swap anything - no matter how big or small - it can be a thing or a service or even a thing for the cake for someone else! The cake is frozen and can be saved until we are out of iso to swapped. This means I can swap it with anyone that I can travel a frozen cake too once iso is over. 01.01.2022 For a very long time, I’ve been meaning to have an online store. For me, it’s never been about selling, more about letting you have a little bit of my love at home. Thanks to the Victorian Country Market, it is now possible for me to have my goodies delivered to you, anywhere in Australia! https://viccountrymarket.com.au/stall/jacican-mirboo-north... Since the VCM came along, I’ve embraced online love. They take care of delivery logistics. At the moment, it’s even free delivery in Victoria. If I need something and can’t be bothered driving to another part of Gippsland (also me and BM have been limiting our movement, because at the moment you should if you can) and need to eat, I just order it through VCM and #clickforvic. My preserves have been on the selves at Jacican since I opened the food studio doors in 2012. I’ve tried selling through a couple of wholesales, but the upkeep was not where I wanted to be. To sell wholesale successfully, I needed to be on top of orders, self-displays, have the time to visit to check the produce looks wonderful, can be found. And I would much rather be in the kitchen cooking than selling. And I only make as much of a preserve as the kitchen garden will allow me. For me, it’s a long process. To make a Sweet Black Tomato chutney batch in May, I have to start thinking about growing the tomatoes in July, not long after I’ve pulled out last year’s crop. A little while ago, I decided to only preserve what I have grown, or someone has given me from their garden. That is one of the great things about living in a small country town when others have excess produces and know that you will use it, they turn up at your door with boxes for seasonal fruit or berries. (Sometimes too many boxes and I’ve had to pass onto someone else to make them own preserves. Sharing is caring!) From tomorrow you can get a gift pack of Jacican I’ve put together a collection of my most popular preserves. The only thing is I only make limited batches of each preserve, so once the preserve runs out, I will change it out for a different preserve. If I run out of something, we all have to wait until the next growing season, for me to make more. Each box will contain one jam, one relish and one chutney. Currently, the gift box contains Rhubarb and Orange Jam, Curried Zucchini Relish and Sweet Black Tomato Chutney. To celebrate finally launching the gift box of preserves, tomorrow night, I am giving away a pack along with some other excellent Gippsland produce.
