25.01.2022 Grateful for my first cake since COVID-19 and s t and d own gave me the time to attempt the fisherman figurine. Very happy with result of figurine and cake. Cake is rich chocolate with vanilla swiss merigune buttercream and Borders Closed COVID themed. Thanks to Luke all for recommending and Kelly for the opportunity

24.01.2022 Have had a busy baking weekend but I couldnt have got through it all without the help of my apprentice baker Miss Poppy. She also helped with the blueberry cheesecake. Melts my heart.

24.01.2022 Two cakes this weekend. First cake was for Teagan's 30th birthday. She was having a Mexican themed birthday and cake is inspired from a Mexican wedding cake. Bottom layer is vanilla and top is chocolate mud both with a Swiss meringue buttercream. Second cake was also a vanilla cake with vanilla Swiss buttercream for Pete who is retiring from Qantas Meterology. Always delivered the bad weather reports with a smile.

24.01.2022 This cake was made for my good friend Conor visiting with his family for his 50th. Conor lived with me in the 90's visiting from Ireland and now resides in Chicago. Cake was a lime,white choc macadamia layer and rich chocolate layers with an Oreo buttercream. Made the boys some Anzac cookies as well whilst visiting.

22.01.2022 Two variations of a espresso martini cake. 1st one has a coffee cream Swiss merigune frosting and Kailua Mascarpone frosting with chocolate shards sprinkled with crushed espresso wafers for Mike's 40th birthday (belated birthday wishes) and the second has caramel frosting, coffee cream cheese and Kailua Mascarpone frosting for Lawrence's 32nd birthday. Lawrence's cake also has the chocolate shards with smashed espresso wafers.

21.01.2022 So originally this cake request was for an engagement party. The couple did a couple of taste tests and chose salted caramel, chocolate fudge cake with a popcorn and peanut topping. As they wanted at least 8 tiers I added the salted caramel Swiss meringue buttercream to give a bit of a naked cake appeal as well as some chocolate and salted caramel drip. The heat and humidity (40 degrees at Penrith) definitely played havoc not to mention the drive to Centennial Park added to the pressure. Imagine the shock when getting there and discovering the engagement party was a surprise wedding. The Event Planner added the flowers at front and the engagement cake was now the wedding cake. Congratulations again to Ana and Michael and many thanks for allowing me to be part of your special day

21.01.2022 First cake for the weekend and what a special one. Made with love for our baby girl who is heading off on an adventure of a lifetime and will be living in the UK pouring beers and making cocktails. Her birthday is tomorrow so doubling up as birthday cake as well for her Aussie Vs Britt party tonight. Bottom layer chocolate top layer vanilla with a vanilla Swiss meringue buttercream. 21.01.2022 Had fun practising buttercream flowers for Danielle's birthday cake. Always enjoy attempting something new and was happy with how they turned out and hope to do more. Cake was mixed vanilla and chocolate layers with Swiss meringue buttercream. Always inspired by Tessa Huff and this inspiration was from her new cookbook "Icing on the Cake". 21.01.2022 This is an Emma the Wiggle inspired cake for a beautiful 3 year old, Lexi. Her Dad Addy and Mum Jane have used Jack of Cakes before so love a repeat customer. Jane has a Emma cake topper and hopefully will have a finished photo to share. Cake is yellow and pink layered vanilla cake with yellow Swiss meringue buttercream and hot pink chocolate drip. Confetti on bottom with some licorice all sorts finished it off. Happy birthday Lexi from Jack of Cakes.

20.01.2022 Well COVID has really impacted everything, the travel industry, the music industry, restaurants and catering; not even mentioning the impact of lockdowns, families and health. These are my first cakes since COVID. I have had a lot of cancellations which is totally understandable but it is nice to be baking again and a few more orders coming. No matter what happens or thrown my way, it always seems a bit easier to deal with in the kitchen. Thank you for the support

20.01.2022 Loved doing this semi naked chocolate cake with blue chocolate drip. Client then added her own topper and flowers as well as cupcakes. 19.01.2022 Was my absolute pleasure to do this wedding cake for the beautiful Danielle and husband to be. Simplistic strawberry flavoured butter cake with strawberry jam compote in between layers and a vanilla Swiss buttercream. Flowers were a David Austin rose similar to the brides bouquet. 19.01.2022 Baby shower cake for Will and Jules. Bottom is vanilla and top chocolate. Swiss meringue butter ream instead of fondant but pink not as vibrant or soft as would have liked. Fondant teddy bears were fun to make. Am excited to meet baby Turner and have recommend how versatile the name "Jacqueline" is

18.01.2022 Always trying to improve my skills and thanks to an early Xmas present from my very thoughtful husband, had the opportunity to attend a Katherine Sabbath Chocolate Bauble Cake Masterclass. Met some like minded home bakers with a love of baking and Katherine was wonderful. And here was the finished product.

17.01.2022 Happy 18th birthday to Tyler. A Marvel fan but wanted to have a more adult theme so red chocolate drip and mixture of lollies on the top. Made a Spider-Man figurine trying to get out of the chocolate cake with a vanilla Swiss meringue buttercream. Thanks to Mum Belinda for using Jack of Cakes

11.01.2022 Another Baby shower cake this weekend. Made with love for the new parents to be; Liz and Dan. So excited to be part of the day and meet their beautiful families. They are going to make wonderful parents. Liz loves foxes and we went with a woodlands themed cake. Top cake was a new chocolate cake reci p e I have been testing and went a great. Bottom was my standard vanilla cake. Swiss meringue buttercream and tree trunk out of chocolate fondant. Animals also made out of fondant and leaves piped. Loved doing this cake and wish them nothing but happiness.

11.01.2022 This cake was made for a beautiful two year old who will always be part of the Jack of Cakes family. Her beautiful Mum is the daughter of a very special friend who would be so proud of them all. Cake was a white chocolate mud with Swiss meringue buttercream with different piping effects for the mane. My absolute pleasure to do this cake.

10.01.2022 Well back from our amazing holiday and back to cakes. The last picture is what Jackson's Mum was after and she is supplying her own dinosaur figurines (photo to come later). This is the second cake for Jackson as I did his birthday cake last year so very grateful for the repeat business. Cake is rich chocolate mud and to alleviate too much fondant blue is a buttercream. One f or family gathering and the big cake for the surprise party. Outsourced macaroons from New York Patisserie purchased by Amy and edible flowers from Sprout House Farms. Main cake is French Opera cake by Tessa Huff with a coffee flavoured French buttercream - meringue and chocolate by Jack of Cakes. Happy birthday Kathy a d thank you Amy for using Jack of Cakes

06.01.2022 Managed to fit one more in before I leave for the beautiful Kirsty's birthday and on night shift. Have been cooking a lot from Instagram and this recipe was from @lifeloveandsugar. Recipe is a tequila lime margarita cake with a lime American buttercream. I added some candied lime peel and lime sugar syrup on the top. Happy birthday Kirsty.

06.01.2022 Tonight is Barbie's last nightshift as she has received her parole notice and bids us a very happy yet sad farewell. I made a carrot cake for her 60th in the shape of a champagne bottle and ice bucket and learned that a carrot cake is not grear for sculptured cakes; so only fitting that I make the ultimate carrot cake with a fabulous cream cheese, golden syrup frosting by @zoebakes and used my sweet stamps from @sweet.stamp. It's party night at QFHQ.

05.01.2022 This cake was for a special repeat customer Tom who turned 10. Both cakes are old fashioned chocolate with Swiss meringue buttercream and then chocolate ganache. Avenger themed cake and Thor hammer is fondant. Tom shared the bottom cake at his party and kept the top cake for his family gathering. Thanks to Mum Mel for supporting Jack of Cakes. Post delayed due to sickness but on the mend finally.
