Noodles: 1 8 ounce package of gluten free Soba Noodles 1/4 Cup Ponzu 2 Tbsp Rice Vinegar 2 Tbsp Honey 1 Tbsp Mirin 1 Tbsp Toasted Sesame Oil 1/2 Tbsp grated Ginger 1 large clove Grated Garlic 1 scallion finely chopped Juice of 1/2 lime Veggies: 1 Bell pepper 1 Zucchini 1 Small Striped Eggplant 1 Package (10-15) Shitake Mushrooms 1/2 Bulb of Fennel 1/2 Red onion 2 Tbsp White Miso Paste 1 Tbsp Gojuchang Chili Paste 1 Tbsp Toasted Sseame Oil 2 Tbsp Olive Oil Garnish: 2 Tbsp Sesame Seeds 1/4 Cup Cashews Thinly sliced Scallions Thinly Sliced Radish Chili Flakes Sriracha Lime Wedges 1. Preheat oven to 425F. Chop veggies into bite sized pieces and place on parchment lined baking sheet. Whisk the Miso, gojuchang, and oils and pour over veggies, toss to coat. Bake for 25 minutes, flipping once, until golden and caramelized. 2. Cook soba noodles according to package directions, whisk all other ingredients in a large bowl and add in rinsed noodles. Sent aside. 3. Toast the sesame seeds and cashews in a skillet until golden and fragrant, about 5-7 minutes. 4. Divide the noodles into bowls and top with roasted veggies.
