23.01.2022 Dear customer With arrival of January, come a real obsession, a French tradition with la galette des rois - the king cake. Traditionally served on 6th of January and often during the whole month , to celebrate the epiphany and the arrival of the three kings to the birthplace of baby Jesus.... but it is simply a festive way to celebrate the new year with family and friends, regardless of religious backgrounds. In France, You will find those scrumptious looking cakes in... every boulangerie ( bakery) and patisserie (pastry shop) usually topped with a golden paper crown. But the pleasure brought by a galette des rois isn’t just due to its delicious taste. It’s also the anticipation of wondering who will be the lucky one to discover la feve , a tiny charm, hidden inside the cake. Tradition states that when serving the galette des rois, the entire cake should be divided such that each guest receives a slice, plus an extra, symbolic slice for any unexpected visitors. Kids and adults alike can get surprisingly enthusiastic about the winning of la feve , and playful accusations of cheating might occur. To avoid this, it is a tradition during the slicing of the cake to have the youngest child at the gathering slip underneath the table to call out the name of the person to receive each slice so the server can’t be accused of playing favourites!! Today I made the traditional galette des rois, made of an irresistible creamy almond filling callfrangipane and sandwiched between two flaky buttery layer of puff pastry.... and best served warm, straight out of your oven. I also made 2 new galettes One with an extra layer of compote of organic apricot infused with rosemary ( apricot are from penna valley farms and are amazing!!) And the other one got an extra layer of diced apple cooked with raspberries onto a fantastic compote See more
