16.01.2022 For the last 3 Jells parkrun anniversaries, your Co-Event Director, Naomi, has made a number-shaped birthday cake. It's been a ginger cake, with green icing (sometimes part of the number was made of chocolate cake). So, to kick off the lead up to our 5th anniversary here is the ginger cake recipe! It is adapted from a variation of the Simplicity Chocolate Cake recipe from the Nursing Mother's Association cook book from 1975, a real corker that you can still buy today from the... Australian Breastfeeding Association (NMAA Cooks Collectors Edition). This recipe is simple and delicious! Ginger Cake Ingredients: 2 tbsp butter 3 tbsp golden syrup 1 cup + 2 tbsp SR flour 1 cup sugar cup milk 2 eggs 3 tsp ground ginger tsp vanilla Preheat oven to 180 C (or 160 fanforced) Grease and line loaf or ring tin Melt butter and golden syrup together Put all ingredients into bowl and mix Pour into tin and bake for 30 minutes or until cooked. Allow to cool 1 hour before turning out of tin. Later in the week we'll post some icing recipes, and a number building tutorial.

12.01.2022 5th Anniversary Cake Preparation, part 2 Buttercream icing The number 5 cake this year will have a lime icing because it goes so well with the ginger cake, and it is an easier option to make (the recipe will be shared later this week) The number 2 and number 3 cakes both had buttercream icing, so we thought we'd share that recipe too.... The first step in this recipe is to turn your heater on. If the air in your kitchen is colder than 18 degrees C, this icing will freeze solid and you won't be able to spread it on the cake. 200 g unsalted butter 2 cups icing sugar mixture 1/2 tsp vanilla essence 1 tbsp milk 4 drops green food colouring Cut the butter into small chunks and allow to sit in a bowl on the bench to soften if it's too cold and hard from the fridge. Beat butter with electric mixer until it goes smooth and pale. Gradually add icing sugar mixture, beat well between additions. Add milk and vanilla and colouring. Fold through until colour is uniform throughout mixture - use a scraper to pull in the mixture from the edges of the bowl. Smooth evenly over the top and sides of the cake.

We thought we'd do some stuff. There will be a couple of posts after this one with some details, but we thought it would be nice to have some cake and to do a bunch of individual #notparkrun 5km runs this week. Watch our posts on this facebook page for more info coming soon.
