25.01.2022 Part 2 - Thermomix Vegetable Soup



25.01.2022 I made this San Choy bau in my TM6 tonight, a recipe on Cookidoo by Matt Sinclair of Sum Yung Guys at the Sunshine Coast. I made it ahead of time and kept it warm in my ThermoServer until we were ready for dinner. It is ridiculously delicious and a regular in our household!! If you would like to host a Cooking Experience virtually or in person with 2 or 3 friends/family and see me make this dish or another recipe or two, as a Host Reward you can choose to have some ThermoServers of your own, available in a range of different sizes. 25.01.2022 I am making a big taco savoury mince on my gas cooktop tonight using 1kg of beef mince and heaps of vegetables. This will be our dinner tonight with warm quick flatbreads, which I will make in the Thermomix while the mince is simmering on the cooktop. It will also make enough to freeze a couple of meals for another night. Before using my Thermomix to make flatbreads, I use it to chop my onion, garlic, carrots, celery and capsicum for the mince - it literally takes seconds. I also use the Turbo function on my Thermomix to pulse the beef mince, as it is quite compacted in the cry-vac, and I like it broken up. Finally, my Thermomix dry roasts and mills the spices for my mince. So essentially, its my sous chef and my pastry chef tonight!

25.01.2022 Ive created this video (in 2 Parts) to show you how simple it is to make pizza dough in a Thermomix. You simply put 5 ingredients (lukewarm water, yeast, flour, olive oil and salt) in the Thermomix bowl and turn the dial. It will knead the dough for 2 minutes and then you have pizza dough! It proves in an oiled bowl for 1 hour and then you can make pizzas. See the Part 2 video for the dough finale after 2 short minutes in the Thermomix. Ive also made a batch of this tomato... pasta sauce in the Thermomix this morning as my pizza sauce - onion, garlic, olive oil, tinned tomatoes, rapadura sugar and salt. The guided recipe on Cookidoo takes you step by step to chop the onion and garlic, and then cook the sauce. I simply increase the cooking time by 10 minutes and put the steamer basket on top of the Thermomix lid instead of the measuring cups, and it thickens to be the perfect rich Italian tomato Napoli sauce. Much cheaper than takeaway pizzas and healthier too.

22.01.2022 Thank you Kylie Jackson for hosting a Thermomix Cooking Experience today with your two lovely friends. We made gluten free quick flatbreads and hug in a mug chicken soup for lunch, and for a sweet finish we made hazelnut crunch bliss balls that I have seen made by 28 by Sam Wood on one of his Facebook videos. A hot tip when making bliss balls is using a small ice cream scoop to keep them all the same size and help compact them before rolling. Ice cream scoops like this on...e in the photo are great for making many things in the kitchen - use the small one for meatballs, bliss balls, mini cupcakes, mini muffins, arancini balls etc. and the big ice cream scoop for standard size muffins and cupcakes, and larger meatballs etc. I learnt this tip years ago from the very clever Caroline Jones of Three Girls Skipping in Graceville. 22.01.2022 I have made these delicious Quick Flatbreads from Cookidoo a couple of times this week, and they are a huge hit with our whole family. Theyre quick and simple, with 5 basic ingredients. It takes less than 2 minutes to make the dough. No resting time is required and then they cook for about 1 minute on each side in a hot pan. They have NO additives or preservatives like most supermarket flatbreads. 22.01.2022 No need for takeaway burgers when you can make them in a Thermomix at a fraction of the cost, using wholesome ingredients with no additives or preservatives! These delicious brioche burger buns (very low in sugar unlike fast food), with beef burger patties, Thermomix mayo and salad is a dinner favourite for our family. Healthy burgers!! 20.01.2022 Sushi is a favourite in our family, but at almost $3 a sushi roll, it can be expensive if everyone wants a few rolls each! Making sushi rice in the Thermomix is simple, and you can use fillings of your choice. I use sustainable tuna mixed with mayo, and avocado. Store bought sushi is very high in sugar, but you can control the amount of sugar when making your own. It is great for afternoon tea, lunch boxes or even dinner!... Use the sushi rice recipe on Cookidoo to make the rice, and then when you are putting the rice onto the seaweed sheets, a good tip is to wet your hands and the rice doesnt stick to your fingers. Add the fillings about one-third of the way along the square of rice on the seaweed and roll up! If you want any more detailed sushi making tips, just drop me a message. 19.01.2022 For those of you who have visited or heard of Sum Yung Guys at the Sunshine Coast, you may be familiar with one of its owners and former MasterChef contestant, Matt Sinclair. The good news for Thermomix owners is that Matt has a collection of his favourite Asian-inspired recipes on Cookidoo and I cannot rave enough about the San choy bau recipe that I have made numerous times, so I thought it needed a special mention. I made it again for dinner tonight and the flavours are am...azing! It is a really simple and quick meal to make, healthy and utterly delicious. It can only be made in the TM6 Thermomix however, as it cooks the ingredients on High Heat (frying temperature). My video will give you an idea of this function in action! 19.01.2022 I started with chicken thighs and did chicken for dinner 2 different ways: 1. Delish pesto nuggets - this recipe is on Cookidoo. These are super healthy nuggets (with chicken, baby spinach, pine nuts, garlic, olive oil, stock paste, coconut cream and gluten free rice crumbs). They are really delicious, and great hot or cold, so leftovers can go in lunch boxes. Crumbed chicken - I keep all of my bread crusts in the freezer (I dont throw any food out!), roughly break them in quarters (still frozen), put them in the TM bowl and chop them on Speed 7 or 8 to make breadcrumbs. I tip the crumbs onto a baking tray (lined with baking paper) with diced chicken thighs and a drizzle of olive oil. I then use my hands to mix the chicken, crumbs and olive oil together, and bake in the oven at 180oC for about 15-20 mins until cooked through. Also great hot or cold, so leftovers can go in lunch boxes. Serve with salad or vegetables and they are both a quick, tasty and healthy dinner.

16.01.2022 The Blend function on a TM6 is a great shortcut for blending shakes! For a chocolate milkshake, simply add milk, sugar of choice (I use rapadura), cacao powder and ice OR vanilla ice cream. Select the Blend function which is set to 30 seconds already, and turn the dial to Speed 8. In less than 1 minute of adding ingredients and blending, you have a frothy chocolate milkshake.

14.01.2022 So excited about the new modes in the next TM6 software update - Egg Boiler & Warm Up. Making the perfect soft or hard boiled eggs has always been simple in the Thermomix, but now it will even be simpler with the Egg Boiler mode! I find the cooking time of the perfect soft boiled egg in the Thermomix for breakfast takes around the same time to shower and get dressed in the morning, so breakfast is cooking while I am getting ready for the day. Warm Up will heat up food while you walk away - no need to stand, stirring and watching a saucepan on the cooktop. Because lets face it, if I walk away from the cooktop while something is warming up, its almost inevitable that I will forget about it and burn it. And given I dont own a microwave, Im thankful my Thermomix can do this job for me effortlessly.

13.01.2022 My younger sister Sophie Mackay has always been the baker and sweet-maker in our family, using her trusty Thermomix to make cake batters and toppings for many celebrations and occasions. Apart from the lollies and sweeties on top, everything in this amazing cake creation was made in her Thermomix - white chocolate cake layer, chocolate cake layer & chocolate buttercream icing. Quite the clever cake chef!!

10.01.2022 Did you know that the humble herb BASIL has a multitude of health benefits - it is antimicrobial, anti-inflammatory, an antioxidant, anti-cancerous, and excellent for your skin and cardiovascular system. So tonight when I give my children pasta with homemade basil pesto, using fresh organic basil and roasted cashews (instead of pine nuts), they’re eating a bowl of goodness to boost their health and well-being. Even better, it is incredibly quick and easy to prepare in the Thermomix! Top it with some Barambah Organics feta, and it is gourmet!!

10.01.2022 Before I owned a Thermomix, I would spend ages chopping onions, crushing garlic and grating vegetables to make a huge lasagne meat sauce or bolognaise sauce filled with vegetables. Now it takes a matter of SECONDS using my Thermomix - literally! It saves so much time in the kitchen, allowing me to get other things done. Not only does it save precious time, all of the vegetables I add to our our meals make them healthier for our family.

10.01.2022 One of the reasons why I love being a Thermomix Consultant is because people tell me that it has changed their lives and how much they love it. It truly makes everything better hearing that! Being Fathers Day, when I asked my husband what he wanted for breakfast, I was hoping it was the usual hollandaise sauce (a SINCH and quick and easy to make in the Thermomix!!) with poached eggs. However, he asked for a very delicious omelette from the latest Ottolenghi cookbook (a Fathe...rs Day gift) ... incredible, but very time consuming to make. Thankfully it is Sunday and I had time. Having said that, it made my day when a beautiful friend (& happy Thermomix Customer) texted me a photo of the delicious pina colada cocktails she made for Fathers Day. They take around 5 minutes to make in the Thermomix and they transport you to the Caribbean. If only my husband wanted a cocktail for breakfast, I couldve saved hours of my day! Hope fathers everywhere have had a lovely and happy day, full of family, love, food, drinks and happiness!

09.01.2022 This caramelised red onion chutney was a delicious accompaniment on a cheese platter last night, along with grain free crackers also made in the Thermomix. 05.01.2022 Sushi rice cooked in 20 minutes while you chop and prepare the fillings, since the Thermomix is doing the stirring and cooking. Another 10-15 minutes of assembly and you have the equivalent of 16 large sushi rolls like you’d buy at a shop, at a fraction of the price! Quick maths at $3/roll is just under $50 for this much sushi purchased at a shop, and you can do it at home for less than a third of this price in 30-35 minutes. 05.01.2022 I will be at Sherwood Rd Organic Meats tomorrow from 9am on the 1st day of August for a few hours, with mouth watering food samples. I made an organic spice & garlic rub in my Thermomix today, along with seared onions for the beautiful free range pork shoulder with bone-in (Saturday special at Sherwood Rd Organic Meats) that has been slow cooking today until it is tender pulled pork. I have attached the video of me making the spice & garlic mix. Tomorrow at the Sherwood Rd Organic Meats store in Rocklea, Ill be making some delicious accompaniments for the pulled pork including mayonnaise, coleslaw (using the mayo), apple sauce, caramelised onions and simple flatbreads. 01.01.2022 What I have made in my Thermomix the past few days: Lasagne (2 big ones for the freezer to be a quick weekday meal) Pizza Bianca (garlic, rosemary & Parmesan) - oldie but a goodie!! Chocolate cupcakes... Creamy chicken coconut curry with cauliflower rice Strawberry fruit ice cream Beef taco mince I also made Beetroot salad, Chicken picadillo cups and Mango fruit sorbet in a lovely Customer’s TM6 at her Cooking Experience yesterday. All food was made quickly and simply over a busy few days! I love my Thermomix, the time it saves me, and the delicious, healthy food it produces

01.01.2022 I really felt like a warm, comforting soup today, on this cold and windy Brisbane day - funny how the winds always pick up around Ekka time, even though Brisbane sadly wont have an Ekka in 2020. I also cleaned out my vegetable crisper after a grocery shop, and found some vegetables and herbs looking a little sad - so hey, presto ... vegetable soup in the TM6 Thermomix! And a warm and healthy lunch. Cooking soup in a Thermomix is so easy, and a great way to use up vegetabl...es in your fridge. See my videos for how simple it is: Part 1 video - vegetables, herbs, water and vegetable stock paste in the TM bowl. Interval - 25 minutes cooking time while I unpacked groceries and unstacked the dishwasher. Love having my hands free to do other things while my Thermomix cooks for me! Part 2 video - blend ingredients in Thermomix bowl for 1 minute with a little olive oil. One bowl to wash up or put in the dishwasher.

01.01.2022 I made this warming and wholesome Golden Latte this morning. As I dont drink coffee, I really enjoyed this as a hot drink alternative, and my husband was equally impressed. You can use cows milk or nut milk (almond and cashew milk are my favourites, made very quickly and simply in the Thermomix).
