Heres how I make the pancake: 2 big heaped tbsp millet flour 1/2 tsp psyllium pinch each salt & pepper... dash onion or garlic or chilli infused evoo water to bring to a batter Cook in a hot oiled pan to golden on both sides. Deeeeeelicious!

What is it? Warm Hummus w Sautéed Kale, Grilled Zucchini & Toasted Walnuts. Yeeeeahhh. Lots of new recipes being made in the kitchen lately for @body_byfinch recipe updates, including this one! 22.01.2022 Vegan Banana Coconut Bread - this relative newbie to the website is the best way to use up overripe bananas. When bananas are looking a bit mmmmhheww peel them and pop them in the freezer in a container for this recipe. Ingredients 1 cup sorghum flour... 1/2 cup almond meal 3/4 cup desiccated coconut 2 teaspoons baking powder 1 teaspoon cream of tartar 2 tablespoons psyllium husks 1/2 teaspoon sea salt 1 teaspoon ground cloves 1 teaspoon ground nutmeg 1/2 cup walnuts, roughly chopped 1/3 cup brazil nuts, roughly chopped 1/2 cup raisins (optional) 1 & 1/4 cup (250g) mashed banana 1 tablespoon apple cider vinegar 1 teaspoon vanilla extract 1 & 1/2 cup water 1/4 cup extra virgin olive oil Method on the website here.... https://jessicacox.com.au///08/vegan-banana-coconut-bread/

21.01.2022 As the weather warms up and you are cranking out the smoothies & smoothie bowls regularly for breakfast thanks to all the pretty inspo in IG, make sure you include your macronutrients for a balanced meal and not just realistically a blended fruit salad. Include: Some form of protein - protein powder, collagen, raw egg some form of fat - a dollop of nut butter or seeds or coconut yoghurt or evoo if you are an addict like me.... some form of complex carbs - top with buckinis or your favourite grain based granola or blend into the smoothie, otherwise add oats or quinoa flakes or sweet potato to the smoothie. Just make sure its not just a pretty decoration amount - you want at least 1/3 cup. Other than this go to town! Get creative! Need inspo? Head to the website and search smoothie.

16.01.2022 A big part of teaching/educating our clients at @thejcnclinic is about batch cooking and prepping for busy weeks. The reality is that most people are time poor, so keeping on top of nutritious meals and snacks with variety to combat boredom really does lean heavily towards some prep time to set you up. Batch cooking & prep need not take your whole weekend. Its still about your level of enjoyment in the kitchen. However, even if you dont love cooking and want to spend a whol...e Sunday baking (like this baking maniac) then at least setting aside 2 hours to prep some food can truly change your week. Here are some tips to save: On sundays, make a roast dinner but make up a load of extra roast vegetables and ensure your protein is beyond the serving size of one meal. This is the ultimate 2 for 1 deal where you get dinner and left overs for the coming days. Boil up some grains - brown rice, buckwheat, millet - whichever takes your fancy. Store in the fridge for 3-4 days or freeze. Great for grain based macro bowls. Do a shop for basics - wraps to add left over veg and protein to, easy spreads like tahini and nut butters, canned fish for easy protein. Boil some eggs - they last quite a few days in the fridge Make a snack - some balls, some cookies, whatever rocks your socks off. Youll be glad you did 3-4pm Monday evening. 13.01.2022 SAVE THISMacro bowls can be meaty too meat lovers! Make this one with: Sweet Potato Meat balls Massaged kale in lemon juice & evoo... Cashew cheese Kraut Alfalfa Radish The key to a GREAT Macro Bowl is some sort of delicious sauce, creamy element & dressing to tie it all together. Otherwise it might look pretty but tastes BOOORRRING, and no ones got time for that!

13.01.2022 HOW TO MAKE This is my go-to quick meal these days. My Millet Flat Bread (recipe on the website) with any green out of the garden and turmeric scrambled eggs. To make the eggs I just mix the cracked eggs w 1/2 tsp powdered turmeric and s&p, then I cook the eggs in extra virgin olive oil. I also use the same bowl the flatbread mix goes in for the scrambled eggs to cut down on dishes. So so easy! Extra toppings I might also add are sauerkraut, kimchi, cashew cheese and pesto.

09.01.2022 This photo was taken when I first took the huge plunge to open The JCN Clinic. Id been a sole trader Nutritionist for 5-6 years, subletting spaces, but I had a burning desire to expand and grow what I loved to do. So I took every cent Id saved to date, took on a lease in Queen Street Mall, paid for a full fit out and opened The JCN Clinic doors. Fast forward to 2020 and The JCN Clinic has grown into an exceptional team of woman I am super proud of, with a trusted & leading ...name in the industry. Along the way there have been so many lessons and so much to learn about running a successful clinic. To date I am still learning as we grown and expand and know Ill continue to do so. Swap broccoli for cauliflower, onion for spring onions, kidney beans for any legumes you have in your pantry - so easy! You can also make them jumbo size for a breakfast muffin, lovely split in half and spread with avocado. Recipe here....

08.01.2022 Each meal provides a platform for adding in extra pizzzazzz when it comes to nutrition. My favourites will always be fresh/dried herbs & spices! Heres some of the ways I encourage clients to add a little extra to their meals: add turmeric to scrambled eggs add cumin & dried oregano to roast cauliflower add five spice to muffins & banana smoothies... add sumac & sweet paprika to chicken add tarragon to potato salad add fresh rosemary & sage to roasting veg add fresh thyme and/or sage to pork chops add fresh parsley/basil/mint to green salads The possibilities are endless! This week, why not discover a new dried spice/herb and a fresh herb in your kitchen. Youve most likely got some fried options tucked away that youre unsure what to do with. 07.01.2022 How about for 2021 instead of making NY resolutions to give things up, you have a think about what wonderful things you can add! Here are some of my suggestions of new ideas to bring on board for 2021 Try different fruit on your nut butter on toast combos (think seasonal with no boundaries and what you can and can’t put on top!) Try a new dinner recipe once a week (don’t over commit and think you need to change your whole diet at once) Try a homemade snack recipe that... you can make up and store in the fridge or freezer Try a vego dinner once a week Use a new nut or seed Use a new grain Try a different fish besides salmon (nothing wrong with salmon, but mix it up!) Triple Chocolate Vegan Pancake Ingredients: 1/4 cup buckwheat flour... 2 tablespoons dairy free protein powder 1 tablespoon flaxseed meal 1 tablespoon raw cacao 1/4 teaspoon baking powder 1/4 teaspoon cream of tartar 1 tablespoon cacao nibs 1 tablespoon chopped dark chocolate ( I used 90%) 1/4 cup + 2 tablespoons rice milk 1 tablespoon olive oil 1/2 pear, grated (could also use mashed banana) // to serve // freshly sliced peach, or other seasonal fruit of choice chocolate sauce (see link below) 1 tablespoon cacao nibs 1 tablespoon finely chopped dark chocolate honey (optional) Method: In a medium sized mixing bowl combine all the dry ingredients then stir through the grated pear, cacao nibs and grated chocolate. Make a well in the centre and add in rice milk and olive oil till well combined. You want the batter to be a bit wetter than a cake batter, but not as runny as crepe batter. If you add all of the milk and need more liquid, simply add a little more. Heat a frying pan to a medium heat and add a lug of olive oil or oil of choice. Spoon the batter into the frying pan to create either one large giant pancake, or two pancakes. Allow them to cook until little bubbles form on the top of the pancakes, then flip over to cook through on the otherside. Ensure you give each side ample time on a medium heat, as if the heat is too high the pancake will not cook properly in the centre. While the pancakes are cooking make your chocolate sauce. To serve, top with peach slices, chocolate, cacao nibs, chocolate sauce and honey if desired.

02.01.2022 My Salted Peanut Granola! Love this as a topper over thick smoothies & smoothie bowls...cant wait for this weather to warm up a bit more to get my smoothie action back on! Still way too cool down here in the Yarra Valley to break out smoothie season. This weekend marks 2 weeks to our 3rd lock down extension of stage 4. Next week however we get 2 hours outside time, which means I can get my Sunday bush-walk back on and go to a park for a picnic with Hubbard. The little things!
