17.01.2022 These egg stuffed potatoes add some flair to plain potatoes and are absolutely delicious. Enjoy them as a post-workout snack or a meal! I N G R E D I E N T S 2 large baking potatoes 1/2 cup salsa... 4 eggs 1/2 cup grated cheese (optional) & salt & pepper to taste D I R E C T I O N S Prep Time: 25 minutes Cook Time: 85 minutes Makes: 4 serves Wash the potatoes well. Pierce them with a fork and wrap them in tin foil. Bake the potatoes in preheated 200 Celsius oven for 50-60 minutes or until very soft when poked with fork. Once done, remove the potatoes from the oven, remove the tin foil, and let cool for about 10 minutes. Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out the flesh leaving about a cm of flesh and skin. Place the flesh into a bowl. Add salsa (and cheese if desired) to the bowl and stir until well combined. Place the potato shells on a baking tray lined with tin foil or baking paper. Fill the potato with the salsa + potato mixture. Press the filling down firmly and create a small divot in the center. Crack an egg over the divot. Bake the potatoes in 200C oven for 20-25 minutes or until the eggs have set. Depending on your preference, you can wait until both the white and yellow of the egg are fully cooked, or remove the potato from the oven before the yellow is fully set. Remove from oven and add salt and freshly ground pepper to taste. Store leftovers in fridge. Enjoy! #jettscarolinesprings #mealprepideas #postworkoutmeal

05.01.2022 It's R U OK?Day, a reminder that every day is a day to start a conversation that could change a life. Today we're calling on Australians to learn what to say after R U OK? so they can keep the conversation going when someone says they're not OK. There's more to say after R U OK?... Learn what to say when listening with an open mind. Learn what to say when encouraging action. Learn what to say when checking in. Learn how to continue a conversation that could change a life. When we know what to say next we can help someone open up and find pathways to support long before they're in crisis. Learn what to say next and help us move closer to our vision of a world where we're all connected and are protected from suicide.
