Great size for the kids lunch box or a snack with your afternoon cuppa! Easy Shortbread Recipe... Ingredients: 250 grams butter (softened) 125 grams caster sugar 25 grams rice flour 1 tsp vanilla extract 375 grams plain flour Method: - Preheat oven to 190 degrees and line two baking trays with baking paper. - Place the softened butter, caster sugar and rice flour into a bowl. Mix with electric mixer on high for 4-5 minutes or until pale and creamy. - Add vanilla extract and mix for another 30 seconds to combine. - While running the mixer on a low speed, gradually add the flour until all added and a soft dough begins to form. - Transfer the shortbread mixture onto a lightly floured surface and gently knead into a ball (split the ball in half, cover one half in cling wrap and put in the fridge) - Use a rolling pin to flatten your first half, until approximately 1cm thick, then use cookie cutters to make desired shapes. - Repeat process with second half of shortbread mixture. - Bake in the oven for approx 9-12 minutes (depending on the size of your biscuits) until edges begin to turn a golden brown. - Allow the shortbread to cool on the tray for 5 minutes before transferring to a wire rack to cool completely. - Enjoy! #justforyouhomewares #makingyourhouseahome #christmas #christmascooking #thanksdevonport #shoplocal #shopdevonport
