21.01.2022 Gooseberries. I just love the way these feisty little irridescent orbs transform. From our one little bush, with my sturdy gardening gloves, I pick two or three buckets. I also grab a big handful of elderflowers. After topping and tailing every single berry, I now have two pots bubbling on the stove. The brew starts out greeny grey, but I know to keep going. Eventually, a gorgeous billowing pink blousey eruption happens. The aroma is so special, with the addition of elderflo...wers. But then, I found my tiny jar of Tongan vanilla, given by my niece Rose. Careful to add just enough to make you wonder just what that amazing flavour is. Though, now I've told you. Loaded with pectin, this jam always sets. Foolproof. Now for a gooseberry and elderflower tart :) See more

16.01.2022 Hello there, jam lovers! It's been a while, I know, but during the past six months, we have had TWO new grandbabies, as well as a litter of kelpie pups! Oh and a thousand lambs :) I have also been stocking another new outlet in Oatlands (as well as The Feisty Hen). Kaleidoscope, right opposite the library and school, is a gorgeous new coffee lounge and gallery, showcasing many different local arts and crafts, as well as Jillaroo Jams. Up and running with Christmas food prep, I will soon have those dear little hazelnut fruit cakes for sale. The fruit has been steeping in hazelnut liqueur for months, so won't they be yum!

16.01.2022 Aaahh. The first fresh brew of Elderflower Syrup has just been bottled here, and will be on the shelves of Oatlands outlets The Feisty Hen Pantry Cafe, and Kaleidoscope on Monday morning. If you have access to an elderberry tree, you really should make some. It is divine.

15.01.2022 I am quite excited to tell you today that we have another outlet! From lunch time today, Jillaroo Jams will be available from The Blue Seal at Eaglehawk Neck, on the way to Port Arthur. Beautiful little eatery under new management.



12.01.2022 Coming to the Oatlands Market tomorrow? We are all ready, apart from the cheese scrolls, which will be made early in the morning. We will have apricot jam and chutney raspberry jam, syrup and chilli sauce gooseberry elderflower and vanilla jam... preserved lemons (I know!) which look gorgeous in the jars, with bay leaves, plus a recipe sheet for what to do with them hot cheese scrolls (for morning tea, while still warm) chocolate oat bars muesli bars fruit cake savoury slice (suitable for your lunch) Everything is reasonably priced, and I do look forward to seeing YOU! 09.01.2022 Hi everyone :) Oatlands Market was terrific last month. Thanks to all who welcomed me back, and supported me. Unfortunatley, I will not be attending the next market, as I have another foodie engagement. I have been invited to have a stall at the Tasmanian Dressage Championships, on both 4th and 5th March, selling biscuits, cakes and sweets. Something different, and it will be lots of fun! Back at the Oatlands Market in April.

08.01.2022 Hey there, Jam Lovers! I am coming to the next Oatlands Community Market. Sunday 5th February. There will be lots of raspberry products - jam, syrup and chilli sauce, as well as gooseberry, blackcurrant etc. Also some preserved lemons, which go perfectly in Moroccan lamb dishes, amongst other things. Yes, I have been rather busy, with sheep work as well. I will also be making those yummy hot cheese scrolls, and some cakes and other goodies for you.

01.01.2022 Hi there, Jam Lovers! It's been a while, but things are still cooking up in the kitchen. The Oatlands Mini-Farmers' Market has started up again, you might be pleased to know. The next one is tomorrow, on the lawns of the old school, now the RAW headquarters. Rumour has it that I will be there, but sadly not true. Will most likely be in the shearing shed. Will let you know when the next one is. Cheers!

01.01.2022 Kasoundi! Yes, almost enough to make me sneeze, grinding the glorious spices for this. A lovely way to use up tomatoes, and it smells absolutely wonderful. Loaded with home-grown garlic too, so it must be good for you :)
