25.01.2022 This Beef Wellington looks mouthwateringly good! #Ingredients: 800 g beef tenderloin trimmed... MUSHROOM TOPPING 300 g button mushrooms 2 onions large 1 garlic clove chopped optional 2 tbs dry red wine 1 tbs Worcestershire sauce 1 pinch dried thyme 1 tbs parsley chopped PASTRY 350 g puff pastry 1 egg beaten 1 pinch salt and pepper *to season #Method: 1. Trim the fillet of beef. Season the fillet generously with salt and pepper and brown the meat quickly, turning occasionally. Remove and cool. 2. Mushroom topping: Cook onion until soft, then add garlic. Add mushrooms to cook slightly. Add thyme, wine and sauce/vinegar. Cook, stirring until all liquid has evaporated. Make sure that the mushroom mixture is very dry so the pastry won't go soggy. Add flour to thicken if necessary. Season and cool. Add the chopped parsley. 3. Pastry: Roll pastry on floured surface until it forms 35 x 40cm rectangle. Spread the mushroom mixture onto the puff pastry in a rectangle the shape of the beef. 4. Lay the fillet on top. There should be an overlap of pastry around the fillet. Lightly brush edge of pastry square with egg. Wrap pastry around fillet, pressing edges to seal. Lay, seam side down, on oiled baking tray. Brush with egg. 14.01.2022 These Oven-Baked Homemade Chicken Nuggets are healthy AND delicious! #Ingredients: 500 g chicken mince 90 g (1 cup) panko crumbs... 50 g (1/2 cup) parmesan cheese (very finely grated) 1 tsp chicken stock powder optional 75 g (1/2 cup) plain flour 2 eggs (lightly beaten) #Method: 1. Preheat the oven to 200 degrees celsius (fan-forced). Place the panko crumbs onto a baking paper lined tray and cook in the oven for approximately 5-10 minutes or until lightly golden (give the tray a shake every few minutes). Set the panko crumbs aside in a bowl to cool. Increase oven temperature to 210 degrees celsius (fan-forced). 2. Shape the chicken mince into nuggets (about 1 tablespoon in size). Finely grate the parmesan cheese and add it to the cooled panko crumbs along with the chicken stock powder and mix through. 3. Place the plain flour into a bowl. Crack the eggs into a separate bowl and beat well. Line a baking tray with baking paper. 4. One at a time, coat the chicken nuggets in the plain flour (shake off any excess), then the egg mixture and finally the panko crumb mixture. Place crumbed nuggets onto a baking paper lined baking tray. Spray lightly with cooking oil and bake for approximately 12-14 minutes or until golden, crunchy and cooked through.
