24.01.2022 Stuffed capsicums. Pots of flavour and excellent meal prep lunch box fillers. If you want to carbs add a bit of cooked rice to the mix. Fry up onion ginger chilli, whatever veggies you want, rinsed tinned black beans or mince if you want . Spice it up. I use sweet paprika and ancho chilli....and kashmiri chilli....i added chopped coriander. Stuff the capsicums, add a little water to the dish to come about 1/4 up the capsicums, cover with foil and bake 45-60min 180 degrees or until they're cooked.

16.01.2022 A few days late sorry...but here is the requested recipe for this salad..oh and sorry i don't really do quantities...just add of your favourites and of not. Grated carrot, shredded red cabbage chopped coriander and mint and spring onions, bean shoots, sliced cucumber. Soak vermicelli bean noodles in boiling water for 5 minutes. Rinse under cold water, cut with scissors (so you don't end up wearing them around your neck)and mix through veggies. The Dressing just needs to be a good balance of salty, sweet and sour with as much as you like from chilli and ginger.... Dressing: i mix up a batch for a few days worth in a jar. Sliced chilli and ginger. Soy sauce, mirin, lime juice, sesame oil.
