21.01.2022 HAPPY AUSTRALIA DAY @umamidiary When I ate Kangaroo during our roadtrip I thought it would taste great if served like Vietnamese pork collar and rice noodles. So I picked up some Kangaroo meat from @johncesterspoultry @prahranmarket and put a bit of a spin on it. Also cooked this for an Australia Day cooking contest at work so this dish symbolises Australia's past and present: used native ingredients like Kangaroo, macadamia (instead of peanuts), and black pepperberries. Marinated the meat in some #vegemite and then paired it with some wine from a winery that is now owned by Chinese people. This is Australia for me #umamidiary
