04.01.2022 If you have already visited Jewel of India, you may have been amused to see the people soak up their red, yellow, brown and white gravies with a wedge of flatbread like it was a piece of cutlery, stuff it in their mouths and lick their fingers in euphoric satisfaction! That is what an Indian bread does to you take you back to your rustic roots and gives you the pure pleasure of enjoying your meal the best way possible with your own hands! While most of us will come up wi...th naan at the mention of Indian breads, this refined-flour flatbread is a foreigner-now-holding-an-Indian-passport recipe with its origins in Central Asia. While the naan came here with Muslim travellers around the 12th century, a colourful history of invasion, trade, travel and a resulting fusion of cultures and cuisines gave us an astonishing variety of breads. The list is huge and it would not only be impossible to document them all but also call some of them as bread! So what do you call an Indian bread? With a wide spectrum of ingredients, methods, appearances, and way of consuming these breads, it is a challenge to decide what goes as bread here. So, to make things simpler, let us consider all those carbohydrate-rich, leavened or unleavened preparations baked in ovens, cooked over a griddle or roasted on an open flame as a bread! These local breads in India rely mostly on healthy whole-grain flours and batters made out of wheat, rice, millets, lentils and their variants and diverge in preparations across the length and breadth of the country. From a tandoor roti, stuffed parathas, kulchas and naan in the north to a dosa, appam, or parotta in the south from a bhakri, wada or puri in the west to luchi or pitha in the east the possibilities are endless.
