22.01.2022 Chicken Parma at the Jolly Fryer We have had numerous requests to put a Chicken Parma on the menu and here it is. Chicken breast crumbed in Japanese Panko, deep fried till its golden and crunchy. Then covered in a three cheese mix and house made tomato sauce and then grilled. Served with Beer Battered chips the Parma is $13.00.

22.01.2022 Why the Jolly Fryer uses Panko Crumbs. Panko is a variety of flaky bread crumb used in Japanese cuisine as a crunchy coating for fried foods.. Panko is made from bread baked by electrical current, which yields a bread without a crust, and then grinding the bread to create fine slivers of crumb, that are flaky and light as a cloud. They create a crispy coating on just about anything that needs a little crunch and they don’t absorbe the oil. 21.01.2022 Monday Nights its Hoki and Chips for $11.00 Hoki is found around Southern Australia and New Zealand oceans. We use the New Zealand fish that are caught between 10m and 1,000m of water. They feed on mainly on small squid, crustaceans and other fish. Its length is between 60 and 120cm. The fish are caught, filleted and snap frozen on board the trawlers. Hoki has a very white flesh that batters up well and break into nice white flakes when cooked. 19.01.2022 Giving Back - Kalamunda Volunteer Bush Fire Brigade. The Jolly Fryer was going to do this before the March Covid 19 shut downs, but that put a little hiccup into our systems. The Jolly Fryer has lived in the hills for over 50 years and in all that time he has been protected by the tireless efforts of the Kalamunda Volunteer Bush Fire Brigade. Now the Jolly Fryer wants to give something back to them. To help in their fund raising we are donating $1.00 from every sauce we sell.... So when you purchase a Mushy Peas, Curry Sauce or any others like tartare, Tomato, Aioli etc., the Jolly Fryer will donate your $1.00 to the KVFB so they can buy equipment to protect themselves and us.. These are cut, de-seeded and then filled with a mixture of cream and tasty cheese. When ordered, these glossy green Jalapenos are coated in Panko crumbs and then cooked in cotton seed oil. 13.01.2022 LOCAL FISH Knowing where our fish comes from and its the best we can supply is important to the Jolly Fryer. This is why we use Hillseafood in Mundaring to supply our fish. This family company has a processing facility in Mundaring. They have sourced for many years, fresh caught fish direct from the boats. These are then transported from the North West, Bunbury or Albany direct to their facility for processing. This keeps the fish as fresh as possible. If youre looking for... fresh fish they have an excellent shop on site in the industrial area. Many imported fish are caught, frozen whole on board and then defrosted once on the mainland, filleted and then re-frozen. (The Hoki from New Zealand that the Jolly Fryer uses is caught and processed on board the ships before putting in their blast freezers). The Western Australian fish the Jolly Fryer has on its menu are Tropical Snapper, Cobbler, Shark and Pink Snapper. Just to confuse our customers the Jolly Fryer has two different types of snapper. Tropical Snapper is a smaller species of Snapper with a milder flavour. They are caught between Kalbarri and Exmouth. Best battered or crumbed in Panko. Usually get to two three small fillets per serve. Tropical Snap...per is $13.00 a serve. Pink Snapper is a stronger flavour with a flaky meat. 10.01.2022 SALT N PEPPER SQUID RINGS To give you premium fish and chips in the Hills, the Jolly Fryer makes in-house a lot of the products they serve. We could buy them in, but we want to give you the freshest and best available. We buy large squid tubes, hand cut them and then coat them in our special salt and two pepper mix (crushed black peppercorns and Szechuan peppers for a little extra heat). They are then coat in Panko crumbs, not batter. This way you get very large squid rings, but more importantly the coating has not been frozen. 04.01.2022 Cooking Options. To bring you the most diverse range of fish and chips in the Hills, the Jolly Fryer has three ways you can have your fish prepared. Traditional Battered with our secret batter recipe that gives you a light, but crispy texture, cooked in Cotton seed Oil. You can have it crumbed in Panko Crumbs (Japanese Bread Crumbs) at no extra charge. To take this to another level why not have it Lemon Peppered or Cajun crumbed in Panko. The last way is to grill the fish.... The best results are from a thick fish fillet so we dont recommend Tropical Snapper or Whiting. Here we can use our special house butter blend of parsley and garlic or you can have it Lemon Peppered or Cajun grilled.
