18.01.2022 A tiny snippet of what happens before our croissants hit the oven. It’s a team effort; our night shifters get the dough ready overnight. It sits in our cool r...oom until the mad baker comes in and adds all that delicious butter. He then uses our handy dough break (just like a big rolling pin) to get it to just the right thickness and layers. He sends the croissy cutter down the dough and then we roll roll roll! It’s a family affair a lot of Wednesday arvos, Lisa and I jump in when we can to get the job done quickly before the dough heats up too much! Real hands made this dough! See more
