23.01.2022 So whaddya' do on a Saturday that's really a Sunday cause of the extra long weekend? Well you have a beer, that's what! Don't think I'll get a swim in today, this rain's been making things a bit chilly round here so I'll just sit at the bar for now with a Carlsberg Paulie found in the specials bin at BWS. I don't normally buy beer so it's always a treat when somebody brings something around to try. Also had a Fixation session IPA which was the bomb.. Going to make one of them next if the Czech pils would hurry up.. Anyway happy Easter everyone, hope you're enjoying some leisure time and taking it all in. Cheers :)

21.01.2022 Well the Fixation "session" IPA's finally ready to go. Hoooly freakin cheese kranski's they know a thing or two about IPA. Incredulous incantation if I may say, bloody delicious for an ol' timer like myself. Make me feel like a young hipster straight outta Compton, whatever that is.. 18.01.2022 If there's one thing I've learnt, when the Folley's come to stay you get a draught underway. A nice simple Aussie lager recipe, tastes great any time of day. Getting it in now just in time to get a little age on Peace all



18.01.2022 Czech Pils'. Only been lagering for a couple of months now which is nothing for a pilsner but it's not bad. Very basic Czech. Just pils, Saaz hops thrown in with 90 minutes left in the boil and big pitch of suitable yeast. They say the simplest things are often the best and I think they're right

18.01.2022 BREW DAY: Dunkles Weissbier Wow, what a great day to brew, the dry's finally here!! Kickin' things off with a German wheat. Lowered the chocolate malt and upped wheat grist to make something more along the lines of a Weihestephener today. Some nice loww AA Hallertau Mittlefrüh @90 and got my WLP-300 starter on the go. Chilling to 20 for this one. Happy long weekend to all. Cheers!

17.01.2022 Experimental Munich helles. Used 5% carahell malt to see what it might bring to the table and am not that impressed. Finding that even that relatively small amount of lightly kilned spec malt is a bit over the top and ends up too sweet. Live and learn

14.01.2022 BREW DAY: PALE WHEAT ALE A little something different today I've gone with a percentage wheat and S-04 English ale yeast. Galaxy, mosaic and Simcoe at flameout to 40ibu, 1.054 OG. Even managed to paint a few rooms with the missus afterwards. What a whirlwind weekend Cheers all, I'm just gonna go pass out somewhere now

14.01.2022 Rightyo tensetters, here it is. "Snobby Jezza's super amazing craft beer carton review". Just what you've been waiting for: So I'm getting through the slab now, and the common theme I'm finding is that commercial beers really aren't all I remember them being cracked up to be.. Not because they're bad at all but because every single one is at least partially oxidised, and that oxidation has such a large impact on the final product it's just not funny. During my days bottling ...I used to look so far up to these craft beers it was a constant disappointment when mine never lived up. No matter what I tried, hop flavour always went down the gurgler and all I could sense was malt and a 'funky' taste that just seemed to come on gradually I could never trace to anything. Fast forward to today's fresh packaged kegs and the difference between a purged keg and can is completely night and day.. Pilsners I've always enjoyed no matter how much O2 or age they've had (fact the more the merrier) but hoppy styles in these cans exposed to just that little bit are all really far degraded from what they should taste like. All I can taste is the crystal malt, which really exentutes, the bitterness from the hops and a bit of flavour and aroma from those but can't even tell what types were used because they're so muted. Even reading the packaging and knowing what's been used it probably could have been anything and is all just a blur compared to the smell you get with your shcnozz in a freshly opened bag of hops. It's been really great trying these beers from some amazing breweries around Australia and I'm actually really humbled knowing mine are just as good finally, after so many years being so frustrated. So to save yourself the muck around. If you want to taste a beer as it was intended by the brewer, drink it from the tap. Night and day difference between the two Over for now

10.01.2022 BREW DAY: PIRATE LIFE PALE ALE and what a beautiful morning for it After having one of these down the pub just the other day I've once again become intrigued, it's like no other pale on the market that I know of. Dark brown colour, rich malt body and taste all nicely hopped that balances well. Revisiting the conversation I had a few years ago just before their sale to C.U.B I was privelaged enough to speak with "Red" who rather generously gave me the recipe. Looking at it on...ce again lately something strikes me, it's really an English brown recipe with US hops! never thought of that before. What a cool take on a pale, one with an actual mark on it rather than the same thing over and over again under a different brand Looking forward to it

10.01.2022 BREW DAY: GERMAN HELLES A recent slew of darker beers has me caning for an old favourite, this time with a small percentage pale Cara to see what it brings to the table. Hoping to lager this one for a while. A big dose of Hallertau mittleftüeh at 90 and those beautiful Herbal notes still come through powerfully in a finished lager due to such a light malt bill Cheers!

09.01.2022 A snapshot of my latest pale. Took a long time to condition due to the usual impatience on my behalf and to be honest was half considering tipping it to make room for more impatience conditioning in the shed.. I must say sorry to Jay Glenno for the premature forced tasting the other week (hehe ) but this kind of thing happens I guess in the world of home brewing. Jolly good ol' chaps. Happy hump day

08.01.2022 BREW DAY: CARA MALT PALE ALE and what a beautiful day it is, first time I've raised a sweat in months! Found an old stash of Joe White Caramalt in the grain container so decided to give it a go as of the show in a new pale while waiting for my pale Cara to arrive to see what it really brings to the table. So far it's nice and sweet, as expected with just a hint of extra colour, I'd say it's more caramelly than crystal for sure which I like, not sure why I haven't used more... of this in the past but I'm here now (slow learner). Also pictured is my first bottled beer in a long time, fresh dunkelweizen in the right style bottle even true to form half a beer slowly froths out over the first ten minutes upon opening but that's home brewing I guess.. Happy Saturday everyone :)

Arrived home yesterday after a long day's work and my super amazing wonderful Wife's suprised me with this bloody awesome craft pack.. said she bought it to cheer me up cause I'm usually a bit grumpy for being so tired but last night I wasn't! Looking forward to doing a little research tasting, you know, make sure my produce is still up to scratch and stuff Have a great weekend all, try to fit some quality r&r time in with your favourite drop. 06.01.2022 BREW DAY: BINTANG PILSENER (2ND ATTEMPT) First trial wasn't a success so taking what I can from that I've revised a new recipe. Lots more sucrose (30%) in order to lower body, mouth feel and also try capture that unique clean aroma that sets Bintang apart from most others. First one was just too similar to a regular pils with that light "grainy" aroma going on. ... Being such a simple beer I've gone with three std pitches lager yeast and kept the hop schedule really light and simple with low alpha Tettnang at first wort which still retains alot if aroma due to the amount needed to reach IBU. Now we wait

06.01.2022 Thanks to Paulie for bringing these Pirates for a try. One sip and I suddenly realised that PL actually really did give us the right recipe! (Despite my heavy handed roast barley addition. 04.01.2022 BREW DAY: ENGLISH IPA It's been a year since my last delicious English IPA and funnily enough using the same yeast slurry that's been sitting in the kegerator for all that time too. Took a while to get going but seems to be tracking along nicely now. Time will tell. This one's the same recipie featured in John Palmer's" beer Bible and the last brew was a prime example of the style, tasted just like my good ol' fave. Looking forward to holding this one on tap again! Left out t...he small amount chocolate malt this time to see if it really tastes any different Cheers all, happy Sunday

03.01.2022 BREW DAY: PIRATE LIFE PALE ALE After reading back through the malt bill and not just recalling off top of the head, turns out I've been making this 'incorrectly' for a bloody long time, lol (oh brother..) Not sure if it's because I originally assumed one malt was similar enough to another at the time, couldn't source the real ingredients(?) Colour didn't seem to add up(?) I'm really not sure but managed to get my hands on some German Carahell which did actually prove kinda ...tough. At this point I must say I've not encountered another malt that tastes or smells quite like this one yet. First I thought it similar to Munich or Vienna but after comparing a bit they're quite different. It doesn't taste like a traditional caramel malt or even appear to be one so really looking forward to seeing what this one brings and hopefully a bloody genuine PL pale. Tastes nothing like the aussie cara 40 I've just used last batch just for reference. Seeming the great pilsner urquell and Heineken helles use this at near ten percent of the grain bill I'm interested to try it in a new lager too. Brulosophy found quite a conclusive experiment in it compared to dextrine malt in that it could be reliably distinguished between Vs carapils etc which could not and actually did hold foam compared to one made without all while adding a sweet character that apparently was not unpleasant but rather desirable Dry hopping in the new keg for the first time with a hop spider so I don't lose any of those fancy aromas thanks to me lovely lass, love ya Babe have a great weekend all, hope it's nice n relaxing. 01.01.2022 A couple beers from yesterday. Paulie being the good bloke he is picked up a few IPA which he likenened the taste to "sniffing an ashtray" after a freshly kegged session IPA (recipie courtesy of Fixation) and looking now it's no wonder why, can was packaged back in August 2019 and has come all the way from the States.
