24.01.2022 This is a refreshing and delicious recipe the whole family will love. Once the fish has been marinated, it will only take about 10 minutes to prepare the tacos. Wrap these in the cabbage or collard leaves or with your favourite gluten-free wrap.... Feel free to experiment with the toppings! If you don’t have time to chop/dice, a good store-bought mango salsa is always an option. Citrus Fish Tacos (serves 4) For the fish Juice from two large oranges Juice from lime 3 tbsp olive oil 1 tsp cumin powder tsp salt 4 cod fillets or other white fish filets (cut into 1 chunks) For the wraps 6-8 collard or cabbage leaves, or 4 gluten-free wraps red capsicum, diced red onion, diced 1 mango, diced avocado, diced Mix the orange juice, lime juice, olive oil, cumin, and salt in a bowl and combine well. Place codpieces into a large Ziploc bag and pour in the juice. Marinate for 2-4 hours in the refrigerator, flipping the bag over about halfway through. When you’re ready to prepare the meal, heat the oil in a large skillet. When the pan is warm, add the cod and cook for about 4-5 minutes on 1 side, then turning only once, finish cooking on the other side (about 8-9 minutes total). 12.01.2022 If you love the idea of dessert for breakfast, this recipe is for you. It feels like a treat. You can experiment with protein powders to find one you like. Some good brands to try: OWYN, Sun Warrior, Garden of Life, Optimum Nutrition. Breakfast Parfait (serves 1)... 1 frozen banana (if not frozen, add ice) 1 cup (185 g) frozen berries 2 heaping tbsp hemp seeds cup (60 ml) almond milk cup (125 ml) sugar-free pomegranate juice (can sub with almond milk) 1 scoop vegan protein powder (optional) 1-2 tbsp granola (optional) Combine all the ingredients except granola in a high-speed blender and blend until it reaches the desired consistency. 09.01.2022 Here’s a classic comfort food recipe! This comes together in 3 steps. 1. Prep the capsicums, 2. Make the stuffing and 3. Bake. You can even prepare the stuffing ahead of time. Time-saving tip: buy a bag of riced cauliflower at the grocery store and steam it, vs. preparing it from scratch.... Bonus tip: try using sheep or goat milk feta, vs. cow’s milk. The texture and taste difference is amazing. You’ll never go back to cow’s milk feta again. Stuffed Bell Capsicums (makes 6 servings) 6 bell capsicums, any colour 4 tbsp olive oil lb (225 g) grass-fed ground beef Sea salt and freshly ground black capsicum 1 small onion, finely diced 3 cloves garlic, chopped 1 medium zucchini, finely diced 4 plum tomatoes, seeded and diced Sriracha, to taste 2 cups (250 g) riced & cooked cauliflower 1 cup (150 g) sheep/goat milk feta Preheat the oven to 180C. Prepare the capsicums: Wash, cut off the tops (set aside) and remove the seeds and membrane. Place the capsicums cut-side up in a baking dish just large enough to hold them upright. Finely chop the tops and set aside. Heat 2 tbsp of oil over medium-high heat in a large pan. Add the beef, season with salt and capsicum and cook, breaking up the lumps, until the meat is just beginning to brown. Move to a paper towel-lined plate to drain fat. Carefully wipe out the pan and add the remaining oil. When it’s heated, add onions and reserved chopped capsicum tops and cook until soft, 4 to 5 minutes. Add garlic and zucchini and cook for another minute. Add the tomatoes, stir, and season with salt, capsicum, and a splash of sriracha. Cook until everything is heated through, then stir in the beef and quinoa/barley/cooked rice cauliflower. Taste and adjust the seasoning. Stir in cup (75 g) of the cheese. Fill the capsicums with the beef mixture and top each with a sprinkle of the remaining cheese. Pour a small amount of water into the bottom of the baking dish and drizzle the capsicums with a little olive oil. Cover the pan with foil and bake for 30 minutes, then remove the foil and bake for another 15-20 minutes. The capsicums should be soft. Serve with a side salad. 03.01.2022 Growth is definitely uncomfortable. One of the ways that people limit themselves to grow is that they don’t create space. The space that we need to move, be it a space in your mind, a space in your schedule, a space in your energy, or space to be physical. Space allows the room for you to focus. For you to be able to take the lessons or inputs that you’re receiving. Give yourself space, allow yourself time to process, to think to reflect. We are not immediate adaptation organ...isms. When we take on a new stimulus, it takes time for us to adapt to it. If you’re looking to grow, and make yourself comfortable you’re doing so in a productive and positive way, you got to give yourselves space, and time to think. you have to give yourself a space in your head, to be able to let go of things that are not productive and not necessary in order for you to move forward. In the business world, those business leaders limit the number of decisions that they have to make, they delegate, automate and simplify their lives in order for them to have space to think about the big decisions and be able to lead their business, their teams, their companies in the direction that they need to go. If you’re looking to be productively uncomfortable, make sure to give yourself some space and make sure you give yourself time in order for these lessons to take place and seep in.
