16.01.2022 Pot of Gold Rainbow Fruit Tray - Healthy Food for St Patrick's Day To make this tray, simply create arched rows of fruit that represent the colors of the rainbow. Ideas: RED - strawberries, raspberries, watermelon, cherries, pomegranate, plums... ORANGE - oranges slices or segments, peaches, cantaloupe, papaya YELLOW - pineapple, mango, bananas, yellow watermelon, golden kiwi GREEN kiwi, honeydew, green grapes BLUE blueberries, blackberries, plums PURPLE - red grapes, purple figs, plums POT OF GOLD FRUIT DIP 16 oz Greek Yogurt 16 oz crushed pineapple in juice, drained 1 T + 1 T raw honey DIRECTIONS Fully drain juice from crushed pineapple. In a large bowl mix together crushed pineapple, yogurt & 1 tablespoon raw honey. Separate into 2 small serving bowls or ramekins to create the Pots of Gold at the ends of the rainbow. Drizzle with remaining raw honey.

14.01.2022 WHAT's Happening In Mandy's Kitchen? I've been experimenting again... this time with Tigernut Flour. Tigernut flour is a great alternative to gluten and nut flours. Tigernuts are not nuts, they are small root vegetables from the tuber family and are incredibly nutritious. It has a unique sweet taste, that's why I combined it in this recipe with Almond meal, chia seeds, maple syrup and ripe bananas. It's very moist and delicious :) It's a winner and going to be in my cookbook. I just need a name/title for it. Any ideas please? xx

As witnessed by Robyn McKinney Magpie Bread the Story While attempting to take photos of her latest creation, Mandy just couldn’t get the lighting right, so she took the tray outside onto the back patio to take some more photos. She placed the tray with the loaf of bread (with a few slices cut for the photo) onto a stand.... Stepping back to the photos, and clicking off what she thought were her perfect shots, she was suddenly photo-bombed by some of the locals who unceremoniously helped themselves and let their friends know of the great feast to be had at Mandy and Craig’s. At least 25-30 magpies had a grand time taste-testing the next recipe for Mandy’s book. It’s a shame that they can’t write a testimonial. This bread is now nicknamed Magpie Bread. See more

10.01.2022 RAW LEMON "CHEESECAKES" (RECIPE) You'll be surprised just how good this raw dessert is! A simple & zesty "cheesecake" that you can whip up with ingredients you most like already have! BASE cup raw almonds ... cup raw cashews cup rice malt syrup 1 finely grated rind of a lemon 1/2 cup organic oats (optional) WHAT TO DO Put all ingredients into a food processor and blitz until fine and combined (approx. 15 sec) Divide the dough between 6 mini moulds (line moulds with baking paper) Press down evenly to made the base. Place in freezer. CHEESECAKE LAYER 1 cup pre-soaked raw cashews cup coconut oil can coconut cream cup cashew butter cup rice malt syrup 2 rinds and juice of lemons 1 teaspoon vanilla bean extract WHAT TO DO Put all the ingredients except cashew butter into blender and blend until smooth, silky texture. Pour the mixture into bowl. Add the cashew butter and whisk gently until dissolved and mixture thickens. Take the moulds out of freezer and pour mixture over mould evenly. Let the cheesecakes set in the freezer for at least 3 hours. Keep cheesecakes in the freezer until 10 minutes prior to serving. CASHEW BUTTER 2 cups raw cashews WHAT TO DO Blitz the raw cashews in the food processor for around 20-25 minutes. Note: Your food processor may overheat - Give it a couple of minutes to rest after every 10 minutes. You may need to stop and scrape down the sides every now and again. Do not be tempted to add liquid. Cashew butter will turn into a thick dough before it turns into a butter. Soak cashews in 1 cup of water for at least 2-4 hours before cooking. http://foodmatters.tv/content/raw-lemon-cheesecakes
