They have to be weighed separately to the catch and sealed for 10minutes - there’s also more paperwork involved - That’s why it’s so important that when u order your crayfish , you collect them . We can’t just throw them back in with the catch . -

16.01.2022 Lunch yesterday was delicious My wok made sticky Chilli cray is Deff worth the share - Don’t forget to suck on the shell - serve with steamed rice ... Recipe - In a Wok -Bit of olive oil Saute’ some kind of onion Add Fresh ginger Garlic Kaffir lime leaf Some Vegeta stock Add water slowly Add fish sauce Soy sauce Add fresh mint Tbs sambal chilli sauce Lemon zest Squeeze of fresh lemon juice Let simmer Medallion your crayfish - Add about half a cup or more of good Asian style sweet chilli sauce - ( I use Trident) Bring back to the boil Add your crayfish - cook for 30 seconds then turn it off ( leave for another few minutes in the sauce or until the cray is cooked through ) Garnish with either more fresh mint or coriander

07.01.2022 THE CRAYFISH SITUATION For the past few years many WA seafood lovers were voicing their concerns about not being able to get reasonably priced crays AND THEN C...hina pulled the pin. Great! Prices dropped by half and you could buy them straight from the fishermen. So, how much of the annual 6.4m kilogram quota have WA people purchased from the back of the boats around our state since inception in mid September? Is it 10%? 20%? 40%? Nowhere near it! .54%. Half of 1%. And remember that’s from a number of ports e.g. Freo, Geraldton, Lancelin and Ledge Pt. The industry is understandably miffed about where all those folks are who wanted cheap crays?
