05.01.2022 Sunday mornings are always pancakes in our house so I thought I’d share my sugar free recipe, which I get asked for all the time! So here it is... Mash 1 over ripe medium BANANA in a medium sized bowl with a fork. (The riper the banana the sweeter the pancakes)... Add 1 EGG & whisk with the fork. Add 1/2 c MILK & 1/2 tsp VANILLA EXTRACT, whisk with the fork. Add 1 c SELF RAISING FLOUR (I use 1/2 sr wholemeal & 1/2 sr plain white but you can use all white or all wholemeal) 1/2 tsp BAKING POWDER & 1 tsp CINNAMON, mix with the fork until combined. At this stage you can add berries or anything else you like. This morning the girls wanted sugar free milk choc chips but they usually just like them with just the cinnamon. Rest the mixture for 1/2 hour, this is important because it’s what will make the pancakes rise & be light & fluffy. Heat a pan, grease to prevent sticking (I use unsalted butter, adds a nice flavour to the pancakes too) Drop spoonfuls of whatever size pancakes you want in to the pan. Once bubbles start to form on top, should be only about 1-2 minutes turn them over. Cook another 1-2 minutes till both sides are nicely browned. Serve plain or with whatever toppings you like. They can be frozen, eaten cold, warmed in a microwave and great in lunchboxes too. Enjoy See more
