VI continues the exploration to finding the perfect variation of hops for that perfect big, high octane hazy. This hazy IIPA has Centennial, Simcoe and Mosaic hops with Head Brewer Stefan adding a sneaky late addition of Cashmere hop (so late, they had already sent the labels to the printers!) at a hopping rate of 20g/L. Cashmere as a hop is exotic and intensely fruity (think lemon, lime, peach ...and melon). METAMORPHOSIS IPA After being crushed to goo at the hands of the Mechaguaranadon, this mysterious beastie plots future devastation from within the hop cocoon.... Weighing in at 6.7% abv, with a Malt bill of Victory and dark Crystal and chock full of Columbus, Cascade & Simcoe Hops. Don’t be fooled by the nefarious aroma. Quite a hefty malt profile, perfectly balanced by refreshing hop bitterness. AFTERMATH DOUBLE IPA Moments after the demise of the Diatamatic Hopzilla, our heroes tap the bitter mystery fuelling its fury. A whopping 9.1% abv this monster is made up of Pale and light Crystal Malts and sporting a hefty Hop dose of Mosaic, Chinook, Simcoe & Columbus. 14.01.2022 ONE- Made from a blend of Monastrell 90% and Cabernet Sauvignon 10% from Spanish vineyard aging over 15 years old with low yields. Manual harvesting for care of delicate fruit and macerated for 21 days in stainless vats before being aged in new French Oak for at least 6 months. Cherry Red in colour with an elegant ripe berry fruits on the nose. Smooth and velvety on the palate with a light roast essence that gives it a wide, pleasant and rich finish.... White- An interesting blend of Sauvignon Blanc 80% and Verdejo 20% from low yielding Spanish vines that are 10 years old. Manual harvesting and Pre-fermentative cold maceration aging and then left on lees in a storage tank for four months. Pouring a light straw yellow colour, clean and bright. Fruit and white flowers, leap from the glass as peaches, apricot, citrus and tropical fruit fill the nose. Fresh and light yet creamy with body. Good balanced acidity.
