23.01.2022 Bergamot skin 'spoon sweet.' It's an absolute revelation - sweetness from the syrup; bitterness from the citrus skin and the intense aroma/flavour of the bergamot that is like a cross between orange blossom and rosewater. Insanely good! It is customary for most restaurants in Greece to offer a complimentary sweet treat at the end of a meal. It is often a plate of fresh fruit to share; a piece of cake or a syrupy 'spoon sweet' and it's a beautiful expression of appreciation ...and hospitality to the customer. 22.01.2022 Just before lockdown I popped into @freshconnection_brighton's newly built store to say CONGRATULATIONS to Debbie Argy and her family. Fresh Connection has returned to its original location, where Nicholaos and Nina Kondelos, Debbie's parents, opened their greengrocery store 60 years ago! The store is just gorgeous - warm and woody - filled with high-quality, fresh, seasonal produce and lots of specialty items. ... The serving counters are made from beautiful, reclaimed wood from the Lyric Theatre in Fitzroy and you just want to run your (gloved and sanitised ) hand over them!! If you are extra lucky, you may even find Nicholaos there - proudly enjoying the fruits of his family's labour! 21.01.2022 A little experiment tonight - a grated pumpkin pita with pine nuts, blackcurrants, burghul, sugar and cinnamon. Full approval from the whole family!!! I took my inspiration from @myfamilysfooddiary and the filling for her beautiful Cypriot Kolokotes. For the fillo, I used the stretching method rather than the rolling pin method. ... I have been given permission by my children to make it again... in a month Variety is the spice of life RECIPE For the filling: Use a large wedge of jap pumpkin coarsely grated, 1/2 cup EVOO, 1 cup blackcurrants, 1 cup pine nuts, 3/4 cup medium burghul. Cook these all together on medium-high heat till the pumpkin softens. Add 1/2 cup caster sugar and 2 heaped teaspoons cinnamon. Mix it all together and set it aside. For the dough: Use 500g special white flour, 1 tsp salt, 1/4 cup EVOO, 1 tbsp vinegar, 1 1/4 cups water. Mix well. Knead for 1-2 minutes. Form into a ball. Place it in a bowl and cover it with a damp towel. Leave for 2-4 hours. Divide into 6 equal balls. Using a regular rolling pin, flatten each ball out into 15-20cm discs. Baste with a mixture of melted butter and olive oil (equal parts - 1/4 of a cup of each). Stack them on top of each other on a plate and cover with the damp towel. Pop them in the fridge for 1/2 hour. Take them out. Take one disc and just gently stretch it out with your hands. When it has stretched as much as it can, remove the thick edge. Fold the fillo sheet in half - so it's like a two-layered semi-circle (it doesn't have to be perfect). Put 1/6 of the pumpkin mixture along the straight edge of the fillo. Then pick up the straight edge and roll it over the filling. Keep rolling till you have a long log. Baste a 38cm round pan with the butter/oil mixture. Coil the log in the centre of the pan. Continue with the other 5 dough discs. Baste the top of the pita with the butter/oil mixture. Bake at 180C fan-forced for 1 hour till the top and bottom of the pita are both golden brown. 18.01.2022 This isn’t me it’s Laura one of the lovely participants of the first The Hellenic Odyssey and @kalioreximelbourne online fillo making class last weekend! Laura and all the other participants brought along curiosity, patience and a persevering spirit to make fillo 2 different ways and make two different pites a tiropita with fillo made using the stretching technique and spanakopita using the plastri (Greek rolling pin) technique. We (actually me) had some healthy skepti...cism about being able to teach these skills online, but we were blown away by our students’ success and their excitement for their delicious pita creations! 17.01.2022 Two and half years ago we first went to @barsaracen as a family and last Saturday we returned to Bar Saracen one last time again as a family. In between, Eugene and I went there countless times Anyone who went out with us, was taken there, and EVERY time they were WOWed by @tomsarafian’s uber amazing fare! My catch phrase was, ‘It’s the best meal in town!’ Well, @barsaracen may have closed its doors, but @tomsarafian has opened the door to @little_andorra, where he is ...going to serve his classics and more for the next three months! Who is going to join us there? These photographs were from last Saturday’s fine feast. My family offered me no time to take the photographs when the dishes were served, hence lots of hand action in the background and ‘missing’ food! I cannot explain how delicious Tom’s food is, you will just have to try it STAT! I followed @marys_kouzina's method and they were For the amount of potatoes I had, I used the juice of 3 medium lemons and I baked them for 45 minutes covered with foil, before baking them for 15 minutes uncovered. Lemon juice burns very easily - so it was important to keep an eye on the potatoes at this stage! Last week I made another pumpkin pie - kolokithopita - as part of @melpomeni.matthews fillo-challenge. I used the rolling-pin - plastri technique (rather than the stretching technique that I used last time). I am going to share the 'how to' on my grid because the video segments are a bit too long for stories. I used a gorgeous @victoriacookwa...re cast iron skillet that was gifted to me by @kitchenwarehouse to bake it and it came up to crispy, golden-brown perfection. 07.01.2022 Kolokithokeftedes - Zucchini Fritters. This recipe is my mother-in-law, Stella’s, and one that Eugene and I learned from her decades ago and have made regularly ever since. Stella fries her fritters in oil in a pan on her stove top. I have adapted it to the oven. Less mess for me and less pan watching. Either way they are simply delicious! 05.01.2022 Part 3. Making the Pumpkin Pie... Here is the step by step ‘how to’ roll-your-own-fillo using a ‘plastri’ - Greek rolling pin video! This is the method my mother taught me over 30 years ago! It produces thin, flaky, crispy, crunchy pastry. Different methods of fillo-making produce different fillo textures. ... I find the stretching method produces a thicker, softer, more moist fillo. One method is not better than the other. It’s a matter of personal preference for a process and a resulting texture! 02.01.2022 Easy one pan wonder!!! 8 chicken drumsticks, skinned (Handy Tip: Use a paper towel to hold onto the skin and pull it off) 8 medium carrots (topped and tailed, skin ON, cut in 1/2 widthways and each 1/2 cut into 1/4s lengthways) 6 small-medium potatoes, skin ON, cut into quarters... 4 cloves garlic, thinly sliced 3/4 - 1 cup EVOO 750ml passata Salt and pepper Add ingredients in above order to a large baking dish - do not mix Cover with foil Bake in 200C oven for 1 hour Remove foil and carefully turn carrots, potatoes and drumsticks over, so passata is covering everything evenly Bake uncovered for a further 20 minutes Enjoy with some olives, feta and crusty bread! #greekaustralian #australianswithgreekheritage #foodpassion #homecooking #foodforthought #greek #greeklife #greeks #greekposts #instagreece #greekfood #greekcooking #greekrecipes #comfortfood #makeitnow #kaliorexi #kalioreximelbourne
