07.01.2022 Today feels like ossobuco weather... lucky we have some great cuts from @dirtycleanfood today. We’re taking inspo from @skyemcalpine and her heavenly buttery so...ft Ossobuco w/ sage and lemon ~INGREDIENTS~ 4 x ossobuco pieces 25g plain flour 8 T EVOO 50g salted butter (plus extra to reheat if needed) 1/2 onion finely chopped 1 fennel bulb finely chopped 2 celery sticks finely chopped 3 pared strips of lemon zest 1 small bunch of sage leaves 200ml white wine 200ml chicken stock Sea salt flakes *** ciabatta and risotto to serve ~INSTRUCTIONS~ 1/ Dust the meat in flour. Add half the oil to a casserole dish wide enough to hold the ossobuco pieces in a single layer, set it over high heat, add 2 pieces of meat and brown both sides for roughly 5 minutes, until golden and crusted. Set aside and repeat with the rest of oil and meat. 2/ reduce the heat to medium. Add 3/4 of the butter and when it melts, the onion, celery, fennel and a generous pinch of salt, then cook until soft. Add the lemon zest and sage and cook for a few minutes more. Increase the heat to high and pour in wine. Lay all the meat back into the dish over the vegetables and let the wine bubble away until reduced by half. Pour in the stock and return to simmer. Cover the dish, reduce the heat to low and leave to simmer for 2-2&1/2 hours, turning the meat every half hour until the meat is tender enough to cut with a spoon. 3/ Add the last of the butter to the dish and leave it to melt before serving #slowfood #weekendfood #dinnerinspo #winterfood #ossobuco

This stuffing recipe using sourdough croutons is delicious and will be served up alongside roast chicken on my table this year. ...- Brown an onion and two celery sticks in a pan. - Stir through a handful each of chopped parsley and sage, a teaspoon of chopped thyme and the grated zest of a lemon - Add to 3-4 cups of sourdough bread croutons with 2 cups of chicken stock, a 1/4 cup each of chopped dried apricots and chopped pistachios and 2 eggs lightly beaten. Season with salt and pepper and mix well. - Optional to fry some chorizo, pancetta or bacon or change up the dried fruit and nuts to whatever takes your fancy. Pecans and cranberries also delicious! - Bake in a 200 C oven for 30-40mins or until the liquid has evaporated and the top is crispy. We have bagged up some sourdough croutons for you which are a pantry staple in our house. Perfect for salads and easy sides like this stuffing recipe. Available online or at the shop!
