23.01.2022 At the first cut of this delightful little Brie, the molten interior flowed on to the plate, it was finished in no time!



21.01.2022 Gouda, pronounced (G) h-ouw-da, is the No.1 produced and sold cheese in The Netherlands and is amongst the top 10 selling cheeses in the world. Traditionally it is made from unpasteurised cow’s milk but, since pasteurised milk keeps longer, commercial production of Gouda is made with treated milk. The town of Gouda doesn’t actually make Gouda cheese but historically had the right to act as a cheese trading centre, so this locally produced cheese became known as Gouda cheese. If you haven’t already tasted this sweet delight, it has a smooth, creamy texture with a nutty sweetish finish. It can be aged for anything up to 12 months and if eaten au natural is best paired with fruits, bread and/or mustard and accompanied with beer or whiskey.

21.01.2022 It’s hard to believe this amazing, sometimes dramatic, year is drawing to a close at last. May 2021 be a better one for us all. While COVID-19 pandemic is presently under control in Australia please remember to continue safe COVID practices. Cheese boards as we know them, with luscious wedges of interesting cheeses being offered for communal tasting are no longer an acceptable way to serve cheese. Instead cheese should be cut into individual portions and placed on individual plates, or cut into individual portions and set out on crackers so single pieces can be easily picked up.
