24.01.2022 It's been a busy few weeks around here but somehow I managed to squeeze in time this afternoon for some more blend development! This one is most definetly getting closer to a blend we will be happy to offer exclusively to our cafe clients. Only 12 bags available (after I keep a couple to work with here ) #brownbagblend

24.01.2022 Damn, he had just two days till retirement. Short of setting the roastery on fire we’ve shut the misbehaving roaster down for maintenance. (Mmmm charcoal beans anyone?) So a few of our beans and blends will be out of stock for the next few days. Good news is the new roaster is being installed this week! Stay tuned!

24.01.2022 Not going to lie. Sometimes I’ve been known to kill an indoor plant with kindness. But not this giant. Home delivered months ago (second pic) by @when.polly.met.murphy after I got in touch asking for a HUGE house plant (around 6 foot tall then)! A bit of water and a bit of help from Munash Organics plant food and have a look at how much it’s grown. We are going to need taller ceilings soon!! Thanks for supplying a healthy happy plant

23.01.2022 Had a day full of roasting a couple of days ago but i managed to squeeze in a couple of trial roasts of a new Indian washed arabica bean I'm looking to work with. I Took this batch a couple of degrees darker than normal for a single origin espresso so it cuts through milk drinks better. I'm not sure what it is about Indian coffee that I like so much, but a double shot of this, half a sugar and some nicely textured milk and I'm in flat white heaven - only 12 bags available this week ps, it's not a blend, but it is still in a brown bag!!

Yesterday (08/09/20) I roasted up a batch of nice coffee from brazil that we have bagged into brown 1kg bags, whole beans only, no fancy labels or blend names in order to try to keep it super affordable for everyone. $27.50 for a kg. 17.01.2022 ZOOM IN. Bullet?? or something else amongst the rocks! PSA this is what we found when destoning 150kg of coffee we roasted Monday. Does the coffee you’re drinking go through a destoner before it hits your grinder? If not you might be drinking this Destoning involves a stainless steel industrial silo plus a vacuum piping and some magic but it separates our delicious coffee from anything that was missed in the grading and sorting process done at origin (usually by hand hence bits slipping through). We only buy specialty coffee but things like this are found semi regularly. Ask your roaster if they use a destoner

15.01.2022 Meet my new apprentice/brother In law/soon to be backup roaster extraordinaire - we are on a weekend long roasting coarse in Melbourne with Criteria Coffee and have learnt a bunch today already. Chris had never roasted a bean before today (and I’ve roasted a few) but we are both soaking up knowledge and new ideas like sponges. COVID killed the social learning aspect of coffee last year for me, the trade shows, courses, comps etc and it’s so awesome to get out and start learning again #neverstoplearning

13.01.2022 The decaf you could serve and no one would know #swisswaterprocess This is our silver medal-winning chemical-free decaf - 18g in 36g out in 27 seconds for a beautifully balanced shot (ground slightly finer than normal espresso) If you want to try one of these get down to The Tin Plate Cafe or Fabulous Flower Co in Ballan and grab an extra coffee without the caffeine #chemicalfreedecaf

13.01.2022 So I was having a spirited conversation with a Latte drinker yesterday (im all about the flat white) about the difference (or sameness!) between the two & I thought I’d better do some research.... ps we invented the flat white sorry NZ A flat white is prepared in a ceramic cup with a 30ml shot of espresso then topped with steamed milk. In cafes serving ‘specialty’ coffee you may get a flat white in a 150-180ml cup some may serve it in a bigger 220ml. A flat wh...ite should have a thin layer of smooth micro foam covering the surface. A latte (shortened from Caffe Latte) is most commonly served in a 220ml glass. Prepared with a 30ml shot of espresso then topped with silky steamed milk to result in a 10-15mm layer of micro foam. Thoughts?
