06.01.2022 Carrot Cake Cupcakes for all you Easter Bunnies Ingredients 1 1/2 cup flour 1/2 tsp baking soda 3/4 tsp salt... 1 tsp cinnamon 1/3 cup sugar 1/2 cup raisins - optional 1/2 cup applesauce 1/3 cup oil 2 tsp apple cider vinegar 2 tsp pure vanilla extract 1 packed cup shredded carrot (200g) Frosting Ingredients 1/4 cup plus 3 tbsp cream cheese 1/4 cup plus 2 tbsp plain Greek yogurt 4-5 tbsp powdered sugar 1/2 tsp pure vanilla extract Instructions Preheat oven to 180 degrees and place 9 cupcake liners in a muffin tin. Combine all dry ingredients in a mixing bowl, then set aside. In a large measuring cup, combine all liquid ingredients (including carrot). Mix wet ingredients into dry, and immediately portion into the baking cups and place in the oven. Bake 20 minutes, then allow to cool before removing from the tray. Mix all frosting ingredients together until smooth. Top cupcakes with the frosting once cool. Serve and Enjoy :) See more
