16.01.2022 "Bullfighters Breakfast" * Olive oil * 2 onions chopped * 1 clove of garlic finely chopped * 1 red or green capsicum diced * 1 packet of Hahndorf Spanish Chorizo (found at Karutz Smallgoods) sliced * 1 fresh red chilli sliced (option) * 3 tins of diced tomatoes... * 1 tablespoon of tomato paste * Pinch of sugar * Salt & pepper to taste * Eggs * Goats cheese * Chilli salt (optional) * Fresh crusty bread Sauté onion, garlic & fresh chilli in olive oil until golden. Add tinned tomatoes, tomato paste, pepper, salt, sugar & capsicum. Bring to boil Add chorizo and bring down to simmer... Cook for about 30 mins stirring occasionally. Crack eggs individually in a bowl & gently lower in desired amount of eggs and cover with lid. Turn heat up a little and cook until eggs are cooked but still quite soft as you want the yolk to be nice and runny. (Keep checking) Spoon in tomato mixture and top with egg, goats cheese, freshly cracked pepper, chilli salt and fresh crusty bread. The chorizo adds a nice smokey flavour and releases a nice bite of chilli to the dish. 12.01.2022 Made with our Hahndorf Spanish Chorizo.. The best risotto I've ever had! And super easy to make! Tomato & Chorizo risotto. 1 tsp olive oil... Twin pack of Hahndorf Spanish Chorizo, diced 1 onion, chopped 350g risotto rice 1 tbsp red wine vinegar 400g can chopped tomatoes 1l hot chicken stock 85g frozen peas or sliced beans 1 tbsp grated Parmesan, plus extra to serve (optional) small pack parsley, chopped (optional) Heat the olive oil in a saucepan and sizzle the chorizo for 1 min until some of the oil starts to come out. Add the onionand cook for 5 mins until soft, then add the risotto rice and cook for 1 min. Splash in the vinegar, then add the tomatoes and stir well. Gradually add the hot stock, a ladleful at a time stir the rice until the stock is absorbed, then add the next ladleful. With the last ladleful of stock, add the peas or beans and keep stirring until the rice is cooked. Turn off the heat and stir through the Parmesan and parsley, if using.
