23.01.2022 NEW RECIPE - VANILLA CHOC CHIP MINI MUFFINS If youre like us and seem to get sweet cravings after meals or during the day this is the dream snack just for you! VEGAN, GF AND DAIRY-FREE... Ingredients; Wet 2 large ripe bananas 1 cup almond milk or dairy free milk of your choice 1/2 cup maple syrup 1 tsp vanilla extract Dry 1 cup rice flour 1 1/4 cup almond meal* 1 tsp baking powder 1/2 tsp baking soda Topping, we dairy free choc chips but you can add sultanas for a healthier option. Method: Preheat oven to 180 degrees Prepare your muffin trays. I use mojo muffin moulds so its nice and easy for my toddlers to grab a hold of and eat. Combine all wet ingredients together Slowly add in the dry ingredients and mix until combine. Then add in the choc chips or sultanas Stirring to combine Bake for 12 mins or until a knife insert comes out clean. Enjoy!! *Substitute the almond meal for buckwheat flour or plain gf flour for a bit free version

22.01.2022 FRIED RICE GOALS We LOVE fried rice, its one of the quickest meals to make and great for leftovers. RECIPE ... Ingredients: 1 x whole green onion roughly chopped 3 x garlic cloves minced 7 x mushrooms thinly sliced and diced 1 x zucchini chopped roughly 3 x silvebeet leaves thinly chopped (steam removed) 5 x cups of cooked rice 2 x tbsp tamari sauce 1 x tbsp coconut amino 1 x tsp sesame oil 1 x tbsp sesame seeds to dress Using a hot, large fry pan, Add 1 tbsp of grapeseed oil or coconut oil Add the green onion, and cook for 3-4 mins Add the garlic and cook for a further 2 mins Add the zucchini and cook for 3 mins Add in the mushrooms and stir to combine Finally and the silverbeet and combine all ingredients. Place a lid on the fry pan for 3 mins to the silverbeet. Once the veggies are nice and soft, add the seasoning, tamari, coconut amino and sesame oil. Stir to combine making sure veggies are nice and covered. Next, add in the cooked rice. Again, stir to combine. This dish is healthy, nourishing, and packed full of favour. What more could you want!

12.01.2022 TO DIE FOR CHOC CHIP VEGAN COOKIES We dont like to play favourites, but when it comes to this choc chip recipe its hard not to! Ingredients ... 230g of vegan butter 200g coconut sugar 2 tsp vanilla extract concentrate 1 tbsp maple syrup 300g of self raising gluten-free plain 90g of dairy free choc chunks Preheat oven to 180 degrees Line 3-4 baking trays with baking paper. Whack it all in a good processor (minus the choc chunks)until well combined. Stir through choc chunks. Using a large tbsp, scoop up some of the dough and drop it onto the prepared baking tray - it doesnt have to be neat. You will only get 5 cookies max on a tray as they spread and rise when cooking. Pop in the oven for 12-14 mins until golden brown. Rocket - 200g 1 x avo - diced 1 x mango - diced 1 tbsp sesame seeds Take this salad to the next level with this PECAN TOPPING! Pecan Topping 1 cup pecans diced 1 tbsp coconut sugar 1 tbsp coconut butter Heat a fry pan to medium heat Add butter and coconut sugar to the pan, once dissolved, add the pecans and toast them into crispy. then pop them aside to cool. Toss all ingredients together and add your favourite dressing - We love an olive oil, balsamic & mint combo.

INGREDIENTS:... * 1 cup hazelnuts (If you roast these lightly in the oven first the flavour is amazing trust me) * 12 dates * 1 tablespoon ABC spread * 2 tablespoon cacao powder * 1/2 cup Desiccated coconut METHOD: 1. Add all ingredients into a blender or food processor. 2. Blitz until they are soft and will mould together to form a ball. 3. Form into balls and roll in desiccated coconut to finish. Enjoy! But lets make them healthy..ish Ingredients ... 1 1/2 cups of hazelnuts 2 tablespoons of cacao 1 large tablespoon of almond spread 12 potter medjool dates (if using other dates make sure you soak the dates in boiling water for an hour before using them drain the water) Method 1. Place all ingredients in a high powdered blender and blitz until combine 2. Roll into bite size balls for a quick and easy go to snack 3.
