Try boosting your energy and mood with a fresh green smoothie Jammed packed full of vitamins, you’ll feel refreshed and ready for the week in no time! Here’s the recipe: ... Ingredients 1 cup fresh baby spinach 1 cup of water or coconut water cup pineapple cup mango 1 banana *Use frozen peeled fruit to chill the smoothie and save prep time Method 1. Add spinach and water to blender and blend together until smooth (should look like green water). 2. Add pineapple, mango and banana and blend until smooth and creamy (30 seconds to 2 minutes depending on blender) 3. 04.01.2022 Mmmmmm....if you’re looking for a deliciously easy and nutritious start to your day, try this overnight Bircher muesli. Packed with the goodness of unprocessed oats, chia seeds, dried fruit and nuts, it’ll give you the ooomph to hit the ground running! Here’s the recipe(p.s. it’s especially delish with dried apricots, and best of all, you can make it the night before and store it in small containers to grab and go on the run). *INGREDIENTS* 100g oats 2 tablespoon...s white chia seeds 1 tablespoon pumpkin seeds 350ml milk of your choice Maple syrup, to taste 1 dash vanilla essence 1 lemon 2 ripe pears 1 pinch cinnamon 1 small handful cranberries / dried apricots *Honey if you need a little more sweetness METHOD 1. The night before, put the oats, chia seeds and pumpkin seeds into a bowl and add the milk, maple syrup, vanilla and a squeeze of lemon juice. Mix well, cover and pop into the fridge overnight. 2. In the morning, chop the pears into chunks, sprinkle over the cinnamon and add the dried fruit. 3. 03.01.2022 Turbo Snack from fridge to pan to mouth in less than 5 minutes.... When you’re tired or don’t have the energy or time to cook up a nutritious meal, try a super fast, High protein omelette. Ingredients: 2 whole eggs... 1 tsp olive oil or butter 1 red pepper, deseeded and finely chopped 1 shallot, finely chopped 2 Mushrooms, thinly sliced 1-2 chopped fresh tomatoes 1 large handful fresh baby spinach 25 g reduced fat mature cheddar Wholemeal toast 1 thick slice, to serve Extra shallot for garnish, finely chopped Method: Mix the eggs with some pepper and salt and set aside. Heat the oil in a non-stick frying pan and sauté the capsicum, shallots and mushrooms for 3 minutes. Pour in the eggs and cook over a medium heat until almost completely set. Sprinkle the cheese, tomato and spinach on top on egg and flip to continue cooking until just set in the centre. Serve straight from the pan and sprinkle extra shallot over for garnish.
