22.01.2022 Tomato soup Ingredients 1000 grams ripe tomatoes 1 onion 3 cloves garlic... 1 small carrot 3-4 cups vegetable stock 2 bay leaves salt, pepper to taste fresh basil dash of balsamic vinegar olive oil 1 tbs cream Wash and dry the tomatoes, then chop them roughly. Try to squeeze out excess water and seeds. Peel onion, garlic and carrot. Finely slice onion and garlic cloves and grate the carrot. In a soup pot, heat olive oil, then add onions and lightly fry them until translucent. Add grated carrots and garlic, stir-fry for about a minute or two, until the carrots tenderize. Then, add in chopped tomatoes and a dash of balsamic vinegar, stir well and let it cook down for a few minutes, stirring regularly. Add vegetable stock, bay leaves and season to taste with salt & pepper. Bring to a boil, then lower the heat and cook for about 15 minutes. When the tomatoes are cooked, remove the pot from heat, then remove the bay leaves and blend into a smooth soup with a stick blender. Roughly chop basil leaves and add to the soup for taste and garnish, add a teaspoon of cream and serve.

21.01.2022 Marinated Cucumber, Onion, and Tomato Salad 1 cup water cup distilled white vinegar cup vegetable oil cup sugar... 2 teaspoons salt 1 tablespoon fresh, coarsely ground black pepper 3 medium (blank)s cucumbers, peeled and sliced 1/4-inch thick 3 eaches tomatoes, cut into wedges 1 onion, sliced and separated into rings Whisk water, vinegar, oil, sugar, salt, and pepper together in a large bowl until smooth; add cucumbers, tomatoes, and onion and stir to coat. Cover bowl with plastic wrap; refrigerate at least 2 hours.

18.01.2022 Creamy Tomato and Salami Fettuccine onion 1 clove of garlic red capsicum... 100g zucchini 30g olive oil 400g Katunga Fresh Tomatoes (quartered) 300ml water 200g of cream 1 tbsp veg stock powder 300g fettucine pasta 100g salami Place onion and garlic in bowl chop for 5 sec on speed 7 Add capsicum and zucchini Chop for 3 sec on speed 5 Add oil and sauté 2 min @ 100.C reverse speed 1 Add tomatoes, water, cream and stock cook for 12 min @100.C reverse speed 1 Add fettucine pasta, submerge into the liquid. Add Salami and cook for a further 10 min @ 100.C reverse speed 1 Serve with grated parmesan cheese

17.01.2022 10 minute Salsa 3 medium tomatoes chopped finely (3-4) large red onion chopped finely 3 spring onions (salad onions) chopped (3-4) bunch fresh coriander chopped (1/4 1/3)... 1 lime juice only a drizzle apple cider vinegar (or any vinegar!) 2 tablespoons olive oil salt & pepper to taste Stir all of the ingredients together in a medium bowl. Serve immediately or keep covered in the fridge for a few days. Alternatively you can freeze the salsa for later. This salsa should stay fresh for 3 to 4 days in the fridge. You can freeze it if you like although you may want to drain off a little of the liquid after its defrosted.

15.01.2022 Tomato passata recipe: how to make the classic Italian sauce INGREDIENTS 5kg ripe red tomatoes, washed, halved 500g onions, chopped... 1 garlic bulb, cloves separated, peeled, bruised 1/2 cup (125ml) olive oil 1 bunch basil, leaves torn METHOD 1. Preheat oven to 180C. Grease 2 baking trays and line with baking paper. 2. Spread tomatoes, onion and garlic evenly across prepared trays, then season with 1 tbs salt flakes and 1 tsp freshly ground black pepper. Divide oil evenly between trays and toss to combine. Roast, swapping trays halfway, for 45 minutes or until tomatoes are blistered and onion has softened. Set aside to cool for 30 minutes, then stir through basil. 3. Pass tomato mixture through a mouli or nylon sieve into a bowl. Repeat several times, together with the seeds and skins, to extract as much juice as possible. Reserve any remaining seeds and skins to make tomato conserva. 4. Sterilise bottles and lids and pour passata into hot jars. Tap jars on a work surface and run a clean knife around the inside to remove any air bubbles. Wipe the rim of the jars with paper towel and seal. 5. Line the base of a large stockpot (it should be deep enough to submerge the jars under water) with a tea towel and, working in batches if necessary, add jars, making sure they don’t touch the sides of the pot or one another. 6. Roughly matching the water temperature to the temperature of the jars (this prevents the jars breaking when the water is added), pour in enough water to completely cover the jars. Slowly bring to the boil over medium heat. Boil for 40 minutes, adding more boiling water when necessary so the jars are completely submerged at all times, or until the jar lids are puffed up and convex. Using a heatproof jug, carefully remove enough water from the pot to allow you to carefully remove jars from water using oven gloves or a thick tea towel. Set aside at room temperature overnight. 7. The next day, the jar lids should be concave, confirming they are vacuum sealed. If lids are not concave, passata should be stored chilled and used within 2 weeks. Sealed jars can be stored in a cool, dark place for up to 1 year.

14.01.2022 910g tomatoes 1 red bell pepper 1 medium yellow onion 6 cloves garlic cup olive oil (120 mL)... kosher salt, to taste pepper, to taste 1 teaspoon dried oregano 1 teaspoon dried thyme 1 teaspoon tomato paste 2 cups vegetable stock (480 mL) cup fresh basil leaves (20 g) Preheat the oven to 220C. Trim the stems and cores from the tomatoes, then roughly chop. Remove the seeds and ribs from the bell pepper and slice. Peel and quarter the onion. Smash and peel the garlic cloves. Add everything to a baking sheet and drizzle with the olive oil. Season with salt and pepper. Roast for 30 minutes, until the vegetables are browned on the edges and fragrant. Transfer the roasted vegetables to a slow cooker. Add the oregano, thyme, tomato paste, and vegetable stock. Cover and cook on high for 2 hours. Using an immersion blender or a standing blender, puree the soup until creamy. Stack and roll the basil leaves, then thinly slice. Add some to the soup and stir to incorporate. Ladle the warm soup into bowls and garnish with more basil. Enjoy!

13.01.2022 INGREDIENTS 200g sour cream or creme fraiche 2 tsp chopped thyme leaves, plus extra to serve 2 tsp Dijon mustard 150g cherry tomatoes, halved... 2 truss tomatoes, cut into wedges 6 smoky bacon rashers 6 eggs 2 tbs pure (thin) cream 2 tbs finely grated cheddar cheese CHEDDAR PASTRY 125g each plain and wholemeal flour 150g chilled unsalted butter, cut into small pieces 100g cheddar cheese, coarsely grated 1 egg 1 tbs white vinegar METHOD 1. For the cheddar pastry, combine the flours, butter, cheddar and a pinch of salt in a food processor and pulse until combined, but still with small lumps of butter. Tip onto a work surface and make a well in the centre. 2. Combine the egg and vinegar in a bowl, mixing with a fork, then add to the well, gently incorporating into the dry ingredients until a rough dough forms. Lightly knead to form into a disc, wrap in plastic wrap and refrigerate to rest for 1 hour. 3. Roll out pastry on a lightly floured surface to a rough 30x40cm rectangle and line a 20x30cm baking tray, pressing into the corners. Trim so the edges overhang sides by about 2cm. Refrigerate until required. 4. Preheat the oven to 180C. Combine sour cream, thyme and mustard in a bowl, spread over base of the tart, then scatter tomatoes over the top, leaving six gaps (these gaps are where the eggs will fit). Tear the bacon into rough pieces and tuck around the tomatoes, then carefully crack an egg into each gap, being careful not to break the yolks. Drizzle over the cream, scatter with the cheddar and season, then gently fold in the overhanging pastry to form a rough border. Bake for 30-35 minutes until the pastry is golden brown and the eggs are set. Serve the tart warm or at room temperature, scattered with extra thyme.
12.01.2022 Tomato Relish / Thermo cook Ingredients: 1 kilo fresh tomatoes, roughly chopped 375 gram Brown onions, quartered... 375 gram white sugar 125 gram water 50 gram EZY sauce 2 tbsp plain flour 1/2 tbsp dry mustard 1/2 tbsp curry powder 1 tsp salt 1/2 tsp ground cloves Method: 1. Put quartered onions in the Supercook jar. Chop: 6 seconds, Speed 5, 0 C 2. Add the tomatoes. Chop: 10 seconds, Speed 5, 0 C 3. Add sugar, Ezy sauce, mustard, curry, cloves and salt Cook with the measuring cup OFF. Steaming basket on top of lid to stop splashes. Cook: 45 Minutes, Speed 1, 100 C 4. In a different bowl mix flour & water into a paste 5. Slowly add flour and water paste through top while the blades are spinning. Cook: 15 Minutes, Speed 1, 100 C 6. Bottle into sterilized jars while hot. Relish will keep for 12 months in sealed jars. Put in fridge once opened.

10.01.2022 Tomato conserva bruschetta INGREDIENTS Tomato seeds and skin mixture (recipe below) Olive oil, to cover, plus extra to drizzle... 4 slices sourdough, grilled Dried chilli flakes, oregano and thyme, to serve TOMATO SEEDS AND SKIN MIXTURE 5kg ripe red tomatoes, washed, halved 500g onions, chopped 1 garlic bulb, cloves separated, peeled, bruised METHOD 1. To make tomato seeds and skin mixture, preheat oven to 180C. Grease 2 baking trays and line with baking paper. 2. Spread tomatoes, onion and garlic evenly across prepared trays, then season with 1 tbs salt flakes and 1 tsp freshly ground black pepper. Divide oil evenly between trays and toss to combine. Roast, swapping trays halfway, for 45 minutes or until tomatoes are blistered and onion has softened. Set aside to cool for 30 minutes, then stir through basil. 3. Pass tomato mixture through a mouli or nylon sieve into a bowl. Repeat several times, together with the seeds and skins, to extract as much juice as possible. Reserve tomato juice for use in passata or pasta sauces and collect any remaining seeds and skins to make the tomato conserva. 4. For the conserva bruschetta, preheat oven to 100C. Grease a large baking tray and line with baking paper. 5. Spread tomato seeds and skin mixture over prepared tray and roast for 1 hour 45 minutes or until slightly charred around the edges. 6. Transfer roasted seeds and skin to a bowl and, using a stick blender, whiz until smooth, then tightly pack into a sterilised jar. Cover with a 1cm-deep layer of oil and store, chilled, for up to 1 month. 7. To make bruschetta, spread tomato conserva onto grilled sourdough and drizzle with extra oil. Scatter with chilli flakes, oregano and thyme to serve.

07.01.2022 Isolation Motivation Fresh Virgin Mary or Bloody Mary. 1 kg fresh, ripe tomatoes... 1 small shallot Optional: 1 small fresh hot chile (green or red) 2 teaspoons fresh lemon juice (plus more to taste) Salt (to taste) Freshly ground black pepper (to taste) Hot sauce, chile sauce, or grated horseradish (to taste) Optional: 4 to 8 tablespoons vodka or gin (Omit for Virgin Mary) Garnish: fresh celery stalks or pickled green beans Gather the ingredients. Roughly chop the tomatoes, shallot, and chile (if using). In a blender or food processor, whirl them until smooth, at least 1 minute to get everything puréed. Do this in batches if necessary. Run the pureed mixture through a sieve or food mill for a smoother texture. Add the lemon juice. Stir to combine, and add salt, pepper, hot sauce or horseradish, and more lemon juice (or anything else!) to taste. Tasting is key to end up with a cocktail that meets your ideal version of a Bloody Mary. Cover and chill the spiced-up tomato juice mixture until cold, at least an hour and up to two days. Pour the juice into 2 to 4 glasses, add 2 tablespoons (or more, no judgment here!) vodka or gin into each glass, if you like, and stir to combine. Garnish with celery stalk and/or pickled green beans.

05.01.2022 HOW TO MAKE SUN-DRIED TOMATOES IN THE OVEN: To make sun-dried tomatoes in the oven, simply Prep your tomatoes. Super simple just slice the tomatoes in half lengthwise*, spread them out in an even layer cut-side-up on a parchment-covered baking sheet, then season with salt. Slow roast. Now comes the patient part the tomatoes will need to slow-roast in the oven for about 2.5 to 3.5 hours at low heat (250F), or until they reach your desired level of dryness. You dont nee...d to flip or rotate the tomatoes during this time, but I do recommend keeping an eye on them near the end to ensure that they do not burn. Serve or store. 05.01.2022 Tomato Sauce makes 1 lt 2.5kg ripe tomatoes, coarsely chopped 2 large onions, coarsely chopped... 10 whole cloves 10 whole allspice berries 1 tablespoon sweet paprika 1 clove garlic, sliced 1/2 cinnamon stick 2 tablespoons salt 1 1/2 cups sugar 2 cups (clear) white malt vinegar Place tomato, onion, cloves, berries, paprika, garlic, cinnamon and salt in a large saucepan over medium heat. Bring to the boil. Simmer, uncovered, stirring occasionally, for 1 hour or until the tomato breaks down and is tender. Step 2 Add the sugar and vinegar. Simmer, uncovered, stirring occasionally, for a further hour and 15 minutes or until mixture reduces, thickens and is of a saucy consistency. Adjust seasoning. Step 3 Strain mixture through a coarse sieve into a large bowl, in batches, pressing down strongly to extract as much liquid as possible. Discard solids. Pour hot mixture into sterilised bottles. Seal. Store in a cool, dark place until ready to use. Once opened, store in the fridge.
04.01.2022 Christmas Salads. What is your favourite salad for Christmas? Here is one of ours.... tomato salad with basil and parmesan croutons. 6 ripe tomatoes 1/2 cup basil leaves 4 slices bread... 5 tablespoons olive oil 2 tablespoons parmesan cheese, finely grated 2 tablespoons lemon juice 5 tablespoons olive oil 1 level teaspoon sea salt 1 level teaspoon pepper Preheat oven to 200C. 2 Tear the bread into bite size chunks and place in a bowl, add oil and parmesan, toss to combine. Spread bread onto baking tray and bake for 10 minutes or until golden and crisp. Set aside to cool. 3 In a small glass jar, combine lemon juice, oil, salt and pepper. Screw on lid and shake well to combine. 4 Slice each tomato into quarters, halve the grape tomatoes and tear the basil leaves into small pieces. 5 Place tomatoes and basil on to a serving platter, top with croutons and drizzle with dressing.

01.01.2022 Homemade tomato Juice INGREDIENTS 2kg fresh very ripe tomatoes 1 cups celery with leaves, roughly cut up... 2 cups chopped onion 1 cup Italian flat leaf parsley including stems 1 orange bell pepper cut into chunks cup carrot roughly cut 1 cup fresh baby spinach 2 teaspoons kosher salt teaspoon sriracha or tabasco 1 cup vegetable broth 3 tablespoons fresh mint 1 tablespoon Worcestershire sauce 1 tablespoon fresh thyme 1 small knob fresh ginger peeled (about one inch) 1 small beet peeled and roughly cut (about cup) cup sugar INSTRUCTIONS Core and remove stems from the tomatoes and cut into quarters. Place all ingredients into a large pot, cover and bring to a boil and cook on a low boil for ten minutes. Remove cover and push everything down to submerge and set to a medium simmer. Simmer for 25 minutes uncovered, then remove from the heat and cool slightly. Using a food mill (see here or here), press everything through the mill. Pour remaining liquid in with milled vegetables. Pour the mixture through a fine mesh strainer or sieve placed over a large enough bowl to collect the juice. Refrigerate the juice until chilled then serve! This tomato juice will stay fresh refrigerated for up to a week. Leftovers may be frozen in zipper seal bags.
