17.01.2022 Sharing:- Boiled Fruit Cake - from Aerophos Recipe Book 1 Lb. Mixed Fruit 5 Ozs. Butter (or Margarine or Good Clarified Dripping) 1 Cup Brown Sugar well Packed Down... 2 Level Teaspoons Spice 1 Cup Water 2 Eggs 2 Cups Self-raising Flour 1 Level Teaspoon Grated Orange or Lemon Rind 1 Heaped Tablespoon Marmalade Place fruit, butter, spice and water in saucepan and simmer 10 minutes. Allow to cool. Whip in the well-beaten eggs. Stir in the sifted flour, the orange rind and then the marmalade, mixing thorughly. Turn into a paper lined, greased cake tin (round tin approx. 7 inches across and 3 inches deep). Bake in a moderate oven (325 deg F) about 1 and 1/4 hours (75 mins). See more
