08.01.2022 Kazumi Ramen 101 vol 2: Ramen Soup = Broth + Flavouring. Broth plays a major role in determining the taste of the ramen. A good ramen broth generally takes hours and hours slow-cooking to complete. The broth base is made of various ingredients such as Tonkostu (pork bones), Torichicken, Katsuobushi (dried bonito flakes), Niboshi (dried salted anchovy), and Gyukotsu (beef bones). A store’s taste is determined by this base combination of ingredients. And despite the variou...s combinations of ingredients, the taste of ramen can be separated into these 3 fundamental flavours: Shio (salt), Shoyu (soy sauce), and Miso (fermenting soybeans). Of course, nowadays, a lot of chefs start creating some new flavours. The innovation of ramen never stops. Please remember this, in Japan, a good soup is always the soul of good ramen, it combines chef's creativity and working spirit. Generally, 300ml is the standard quantity.
