25.01.2022 Have been doing some baking this morning Zucchini and carrot cake is fricken amazing and a massive hit around here. I do use maple syrup instead of coconut sugar and add walnuts too and make it in the thermomix. Sooo quick and easy. The other ones are just whatever veggies I can find in the fridge grated (today it was zucchini, carrot, pumpkin and sweet potato) mixed with cooked onion and bacon, about a cup of cheese and 7 eggs. Then a little piece of tomato and a pinch of c...heese on the top. They work out around 190 calories a muffin so I’d have two of these with a salad for lunch or just one for a snack. Packed with protein and fricken DELISH too!!
14.01.2022 Had a craving for savory scones! Didn’t have a recipe on the healthy mummy so grated up a bunch of veggies (sweet potato, pumpkin, zucchini, carrot) added some wholemeal self raising flour, cheese, an egg and a cup of low fat milk and hoped for the best A little bit heavy and not your usual fluffy scones but I cut it open and smothered with some butter and it hits the spot! Would probably add a bit of salt next time only 118 calories with a massive slather of margarine on them too!
09.01.2022 My first official weigh in today and I’m stoked!!! Lost 1.3kgs which is a bit less than I probably would have liked BUT I know it’s due to the beers I had Friday night and then the bits of Hungry jacks I ate on Saturday so really if you count them it’s an amazing loss AND look at the cm difference 18cms gone from my body forever! Other small wins this week I’m used to no fat milk and sweetener in my coffee again ... I’ve hit my step goal on my garmin every single day I’ve been more aware of my water intake and making sure I get a full minimum 3 liters of water in a day I’ve had my apple cider vinegar shots every single day even though they make me cringe I’m feeling FRICKEN AMAZING and soooo pumped to smash out this week. Goals for this week are ; - NO ALCOHOL - Up the exercise - Watch my portion sizes and the amount of carbs I’m eating. As I also have PCOS carbs are not my friend sometimes. WOOHOO today is going to be a good day!! Happy Tuesday
