23.01.2022 Brrrr it’s been so cold on the Gold Coast these last 2 days I made a big batch of this last night and was happy to be able to warm some up for my lunch today . It’s full of orange coloured veggies like carrots, sweet potato and pumpkin which means this soups is high in beta carotene . And why is beta carotene good for us....? 21.01.2022 COCONUT FRENCH TOAST This is one of my all time breakfasts!!!! It’s a bit drizzly and cold on the Gold Coast this morning so perfect time to whip up some of these.... 4 pieces of sourdough bread... 270ml coconut milk 1 free range egg (you could easily leave this out if you want a vegan version) 1 banana 1 tsp vanilla paste 1 tsp cinnamon 1 cup of berries of your choice 1 tbsp maple syrup Blend the coconut milk, egg, banana, vanilla and cinnamon together then place in a shallow dish or container. Heat a non stick frypan. You can grease with a little butter or coconut oil if you need. Dip your sourdough into the mixture and fully coat it. Once the pan is hot place the sourdough pieces in the pan to fry up a little. Once browned flip over and repeat on the other side. Place 2 pieces onto 2 plates then top with the berries. 19.01.2022 I’ve been meaning to make these healthy banana pancakes from @brownpapernutrition for a few weeks now and finally got around to it this morning and boy am I glad I did . The pancake only consists of eggs, banana, cinnamon and vanilla and that’s it, making them gluten and dairy free. It’s a bit of a cold and drizzly morning here on the Gold Coast so figured it was perfect time to whip up some of these.... 4 pieces sourdough toast... 270ml coconut milk 1 banana 1 free range egg (you could easily leave this out if you want a vegan version) 1 tsp vanilla paste 1 tsp cinnamon 1 cup berries of your choice 1 tbsp maple syrup Place the coconut milk, banana, egg, vanilla and cinnamon into a blender and blend until smooth. Place the mixture into a shallow dish or container. Meanwhile, heat a frypan and add a little butter or coconut oil to coat. Place the pieces of sourdough into the mixture one at a time and allow to coat fully in the mixture. Place into the frypan and repeat with other pieces. Allow to brown on one side then flip over. Once browned and cooked place 2 pieces onto 2 plates and then top with berries. Sprinkle with a little cinnamon and then drizzle with some maple syrup. 09.01.2022 How to beat that afternoon energy slump???? 1. Eat a nourishing breakfast that’s high in protein and fiber. Something like eggs on sourdough toast or some porridge made with whole oats, grated apple, cinnamon and topped with some walnuts and pepitas will set you up right and keep you fueled for most of the day make sure you follow this up with a nourishing lunch also! 2. Go for a walk and get some fresh air and sunshine in your lunch break. This will h...elp promote circulation, stretch those stiff muscles and help regulate the bodies circadian rhythm 3. Avoid having that extra cup of coffee and sugary snack. These might taste good and give you a quick energy hit but they’ll leave you feeling more deflated in the long run, plus the coffee could even interfere with your sleep that evening. Try a green tea and bliss ball or some raw nuts instead. 4. Make sure you’re properly hydrated! Dehydration can lead to fatigue and impact our concentration. Aim for at least 2L per day, herbal tea can be included in this also 5. Get a good nights sleep! This might sound obvious but it does often get overlooked.
