22.01.2022 Prepped some of our Christmas lunch last night A faux-tato salad using cauliflower instead. My first time trying out the @sirkensingtons avocado mayo I bought from @iherb and it is amaaazing Some keto buns using the famous @mariaemmerich recipe. I end up making these almost every Christmas. So easy to make and always a hit... And lastly, a special request from my man @osad_inc - keto eggnog! It's never been something my family has at Christmas but I thought why not give it a go seeing as I lurrve rum I used the @gnomgnom.yum recipe and it was actually pretty simple to make. With some gingerbread @captainmorganau added in, we'll be ready to party! 05.01.2022 Leftover Thai coconut fish curry for dinner This was super simple to make. I bought some basa fillets on special at Coles so I could throw something cheap and easy together. Minced garlic, chilli, ginger and a bit of turmeric powder to start with, cooked in coconut oil. Added some lemon juice and then the coconut cream+milk. Freshly chopped coriander next followed by the whole fillets and let them simmer in the sauce.... 02.01.2022 Brownie time!! First time trying these and they were so simple to make. I used the flourless chocolate and macadamia brownie recipe from @myketokitchen so they can be made nut free if you omit the macadamias Instead of the sugar free chocolate chips I used cacao butter and cocoa powder in an approx 65/35 ratio...... The recipe calls for 7oz (200g) of chocolate so I used roughly 130g of cacao butter and 70g cocoa powder.
