25.01.2022 #cheesemaking progress Edit: I forgot to add that I need to cook the curd in the whey for about 30 minutes while heating it to 40 degrees. This helps release moisture from the curd. It will then be drained, pressed, flipped, pressed, flipped, pressed then cooked to 90-95

25.01.2022 Good evening everyone. Stage 4 restrictions update from Key Permaculture. We have received advice from the government that we are still able to continue trading, however with some restrictions.... We are allowed to construct our Total Harvest Protection structures and the works associated with the construction project only. Emergency repairs and critical maintenance of existing structures is also allowed. All pruning, planting and maintenance works are currently not allowed including the installation of Biofilta FoodCube wicking beds (classified as gardening) We are also putting the retail sale of FoodCube and veggie seedlings on hold for the duration of Stage 4 We are experiencing some delays as our suppliers are also still working through the new restrictions. We have our UrbanX (10m x 20m) in stock and available for installation during Stage 4 restrictions (limited supply only) Our Urban Compact (7m x 12m) and Urban (7m x 16m) are available for installations from the 26th of October. The current special on the Urban Compact will continue to run for Stage 4 lock down with a $400 saving off all works booked during lock down. We will be updating the website over the coming weeks as the situation evolves, for the most up to date information we will be using Facebook and Instagram to share this. 25.01.2022 Stage 4 restrictions have meant no opportunity for harvesting wild free range venison to stock my freezer. I had a call last night from a client within my 5km radius that had shot a deer. It was skinned, gutted and hung in the driveway last night then butchered this morning (in my slippers )... This will keep up feed for several weeks with a range of meals from roasts, slow cooked shanks, sticky ribs, mince and a selection of burgers and sausages. The heart will be for dinner tonight, the liver will be dehydrated into dog treats and the kidneys prepped for steak and kidney pies. I try to utilise as much of the animal as possible to value the life that has been taken to sustain mine. Turning a problem for a farmer into a solution for my dwindling meat supplies in the freezer!



24.01.2022 #eatmoredeer This week has been very annoying to say the least! However I can not change what's happened and we will await the insurance review. This afternoon I thought I would have a go at making "Venisham" The whole back leg with shank and bone removed, wrapped in netting, injected with brine and left for a week before being smoked.... This fallow buck was in velvet antler so had put heaps of fat on to grow antlers and get ready for mating season. OR we could build a nice redgum chopping board and mount in in the bench This redgum slab has been around for 13 years so it is nice and dry! The client also wanted a flat roof with a pitch similar to the house. 23.01.2022 Are your kids climbing the walls during lockdown? Keeping a young active 4 year old engaged with the current restrictions has been a challenge! Luckily the problem is the solution If you are climbing the walls, lets actually let you climb the walls! #dadventures yesterday was another construction project. We removed the weatherboards around the back door and installed chipboard floor to the studs. To this board we screwed in some eBay special climbing holds ... Wren is wearing his ear muffs from @demaktimber so we could attach the holds as needed! We applied 3 coats of a marine varnish over the mural to provide durable waterproof protection that is super easy to keep clean.... 20.01.2022 14m x 30m Total Harvest Protection build in Gisborne. This is the first 14m wide structure with galvanized steel support posts, we needed to make a few adjustments from the installation process for timber, however it came together so well and looks amazing! Steel provides a more durable and more sustainable product with the entire structure 100% recyclable! The minimal waste from the build is able to be sent off for recycling, where as treated pine ends up in a toxic landfill... and continues to poison the environment for a long period of time. Also, the use of steel is a far superior material in the event of a bushfire as it's ability to withstand the impacts of the fire are greater than treated pine, and if it is damaged, it can still be recycled! 17.01.2022 My morning ritual Coffee for two shared in bed with #someonespecial Coffee from @incywincyemerald which they grind to suit the @aeropress I buy 2kg of beans a time and store them in my number 65 @fowlersvacola jars.... This saves heaps if waste from buying lots of smaller bags and storing in the glass bottle keeps it nice and fresh. (1kg of ground beans nearly fit in 1 65 jar!) The AeroPress is fantastic as there is no waste from single use pods and it's super simple to use which is really important before the first coffee The filters in the Areopress are the only consumable item. I rinse my filters then reuse them and can get up to 10 cups of coffee from 1 filter! 15.01.2022 The oven at HQ has been on the blink for about 6 months. It's been patched and kept running up until last week when the fan finally gave up the ghost and the oven completely stopped working. LUCKILY, pre Covid I had bought a brand new second hand free standing oven ($400 instead of $2500 because it has 2 minor dints!) with plans to install it, but then everything happened. Finally today we were rained out on-site and with the horrible weather outside, I took the opportu...nity to get the oven installed. The bench top and cupboard were removed then modified to suit the new oven and we are stoked with the results! The only 'problem' is what to do with the old in bench gas hotplate. The problem is the solution! So we are going to machine up a nice piece of redgum slab and make an in bench chopping board to fill the hole, providing an elegant, productive and useful solution to what otherwise could be a very expensive exercise replacing all the bench tops! 09.01.2022 Last #eatmoredeer post for tonight! I went for a narrow rib cut to see how it goes! I've marinated them and vac sealed for overnight marinating. Into the smoker tomorrow for 6 plus hours of low and slow cooking.... There is 2 shanks in the oven at 120 for 14 hours to get turned into pulled venison pies, ribs into the smoker and venisham sitting in brine! 07.01.2022 Dinner for the win. A light smoke cycle gives the meat balls this ring of colour and a flavour that is tough to beat. Finishing the cooking in the sauce ensures the meatballs stay moist and don't dry out.... A little sauce mixed with the cooked spaghetti, meatballs and cheese then grilled for 2 minutes and finished with parsley. 05.01.2022 Saving the bees! As we transition to using Regulation 13 compliant netting we needed to solve the issue of pollination. As we showed the other day, bees will fly into a structure through the chicken wire and then fly to the roof to escape.... This has been solved by providing a pollination panel at each end of the structure from the chicken wire wall to the underside of the hoop. 04.01.2022 This is a small custom build project in Warrandyte, using existing treated pine posts. We went with a flat roof as the client wanted to match the existing fall of the house roof. We installed our standard 1.2m wide sliding access door as well as a 2m wide larger access door at the far end of the build.... As part of this project we also reworked the layout inside the available space, installing a new raised garden bed and relocating the existing raised beds. This ensured maximum growing space, without compromising on access and ease of use Thank you Claire and Bill and best of luck this season with producing an abundance of organic produce for yourselves and your family. Now they don't have to fight the deer, possums and birds!

03.01.2022 14 wide x 30 m long Total Harvest Protection build by Key Permaculture. This gives us a total 420 square metres of area inside. Using just shy of 800 square metres of net, over 500 metres of fencing wire and approximately 50 Gripples. All Posts are in the ground 1m to 1.3 metres at 3.7 metres long overall, giving you a wall height of 2.7m to 2.4 metres. This accounts for the fall of the land and keeps the enclosure level. Every job is bespoke to suit the site and the clients needs. This build required 2 access gates on the front. One for everyday pedestrian access and one to allow large machinery through as needed. It has come up an absolute treat.
