25.01.2022 Vegetable fritters (from Nutrition Australia) These can be cooked the night before, refrigerated and eaten cold the next day. Ingredients 2 eggs... 1 cup milk 1 cup self-raising flour Olive oil spray Salad or salsa to serve 3 cups chopped/grated vegetables (such as corn, sweet potato, zucchini, capsicum, broccoli, cauliflower) 1/2 cup fresh herbs (such as coriander, spring onion, parsley) 1/2 cup cheese (such as mozzarella, cheddar, cottage. Optional) 2 teaspoons (metric) spices (such as paprika, turmeric, coriander, chilli. Optional) Natural/Greek yoghurt to serve (optional) Instructions Wash and chop/grate the vegetables and herbs. In a large mixing bowl whisk the eggs, then add the milk, herbs and vegetables stirring well. Add the flour and cheese and spices if you are using these. Spray a large non-stick frying pan with olive oil spray and heat on medium heat. Dollop 1 tablespoon of the batter mixture into the frying pan at a time making sure there is enough room to flip the fritters. Cook for about 2 minutes on each side until golden brown in colour. 19.01.2022 Not So Naughty Treat Recipe CHOC CRACKLE SLICE INGREDIENTS... 13 cup rice malt syrup 13 cup coconut oil 13 cup almond butter 3 tbs cacao, or sugar free cocoa 13 cup dried cranberries, roughly chopped 2 tbs pumpkin seeds 3 cups puffed rice METHOD Line a 20cm square baking tray with baking paper. Melt syrup, coconut oil, almond butter, cacao powder and a pinch of salt in a medium saucepan over low heat. Remove from heat and stir through cranberries, pumpkin seeds and puffed rice. Press into prepared tray and refrigerate for 3 hours until firm. Cut into 16 pieces and store in an airtight container for up to a week. 06.01.2022 Beef, Barley and Vegetable Soup (from Nutrition Australia) A hearty nourishing soup of beef, tender pearl barley and plenty of vegetables. Ingredients... 500g chuck steak (diced and trimmed of fat) 1 tablespoons (metric) olive oil 1 onion (chopped) 2 stalks celery (sliced) 2 carrots (chopped) 1 parsnip (chopped) 2 tomatoes (chopped) 1/2 cup barley 1L beef stock (salt reduced) 1L water 2 zucchini (diced) 400g can kiney beans (drained and rinsed) 1 cup frozen peas Parsley (to serve) Instructions Toss beef in oil, heat a wide saucepan or stockpot over medium-high heat and brown beef in 2 batches. Reduce heat to medium and add onion, celery, carrot, parsnip, tomatoes and barley. Add beef stock and 1 Lwater and bring to the boil. Simmer for 2 hours or until beef and barley are tender. Add zucchini and kidney beans for the last 15 minutes of cooking. Add frozen peas for the last 5 minutes of cooking. Serve in large bowls with fresh chopped parsley. Notes Try serving soup with a dollop of pesto or a grating of parmesan. Leftover soup freezes really well, so pour into plastic containers with tight fitting lids in individual portions and freeze for up to 3 months.
