25.01.2022 Ham, Cheese & Spinach Puffs INGREDIENTS: 2 sheets puff pastry 2 tablespoons unsalted butter... 2 tablespoons all-purpose flour 1 cup (240ml) warm milk 1 pinch of salt Freshly cracked pepper, to taste Ground nutmeg (optional) 220g cooked ham, diced 2 cups fresh spinach, rinsed and chopped 1 cup Swiss cheese, grated METHOD: 1. Cut the puff pastry sheets into 13cm squares. Set aside in the refrigerator. Pre-heat your oven to 200C. 2. For the bechamel sauce: Melt butter over medium heat in a saucepan. Add flour and salt; cook, stirring frequently, until the mixture becomes pale golden with a slightly nutty aroma. 3. Pour warm milk in 2 steps, stirring constantly with wooden spoon and whisk until smooth. Cook the mixture, stirring constantly along the bottom of the saucepan, until boiling, about 7 minutes. 4. Reduce heat to low. Simmer gently until sauce thickens, about 10 minutes. If you still have lumps, use your immersion blender! 5. Stir in spinach and cook for 1 minute. Add ham and cheese and stir well. Set aside. 6. Arrange the puff pastry squares on a baking sheet lined with parchment paper. Dollop 1 or 2 tablespoons of the bechamel mixture, top with grated cheese and close the pockets by folding the corners on top. 7. Make an egg wash using an egg and 1 coffee spoon of cold water. Brush the puff pastry and bake in the oven for 20 minutes, until puffed and golden. Serve immediately See more

11.01.2022 These easy cheesy egg roll ups are perfect for breakfast on the go for busy mornings Ingredients: 2 eggs 1 tbsp milk... 2 tbsp cheddar cheese shredded 1 tsp oil butter or spray Instructions: 1. Pre-heat a small non-stick pan over medium-low heat. Spray the skillet or grease with 1/2 teaspoon of oil or butter. 2. In a small bowl, whisk the eggs and milk together. 3. Spoon half of the egg mixture into the pan and cook for 2 minutes. 4. Sprinkle the cheese on top of the eggs, cover the pan with a lid, and cook for 2 more minutes. 5. Using a spatula, carefully slide the flat egg onto a cutting board. Let cool slightly for 1-2 minutes but no more or the egg will be too cool to roll. 6. Starting on one side of the egg disc, start rolling the egg as tightly as you can until completely rolled up. Place seam side down and let cool slightly. As it cools, the egg roll-up will hold its shape. Repeat cooking process with remaining egg mixture. Enjoy See more

11.01.2022 Yummy kid-friendly frittata INGREDIENTS 1 tbsp Olive Oil... 1 Onion, finely chopped 1 tsp Garlic, minced 1 Red Capsicum finely chopped 1 Carrot, grated 190g (1 bunch of 8 stems) Broccolini 150g (1 cup) Peas 6 Eggs 2 tbsp Whole Milk 35g (1/2 cup) Cheddar Cheese 1 tsp Dried Oregano INSTRUCTIONS Preheat oven to 220c In a mixing bowl, whisk together the egg, milk, cheese, herbs and seasoning. Heat oil in a 10" cast iron pan, add the onion and garlic and cook for approx 5 mins. Add the bell pepper (capsicum) and carrot and cook for a further minute. Add the broccolini and cook for a further min. Stir in the peas. Give your egg mixture a final whisk and pour the mixture over the vegetables. Stir briefly to distribute the mixture evenly across the pan. Cook on the stove top for approx 1-2 minutes. Just until the edge of the frittata has turned lighter in colour. Transfer to the oven and bake for approx 8-10 mins, ideally, you should take the frittata out of the oven when the middle still has a SLIGHT jiggle to it or when it is just set and no more. Cool in the pan for 5 mins and then slice and serve. Enjoy! See more
