This berry breakfast bowl is my go-to breakfast recipe. Ingredients 60g frozen raspberries (half a cup) 80g frozen blueberries (half a cup) 1 teaspoon almond butter or other nut butter Large handful of baby spinach leaves 1 tablespoon chia seeds Quarter teaspoon ground cinnamon 250ml/1 cup almond milk or other nut milk To serve 1 teaspoon coconut flakes 1 teaspoon cacao nibs 1 teaspoon goji berries Method Place all the ingredients into a high-speed blender or food processor and blend until thick and creamy (if the consistency is a little too thick, add a little extra almond milk). To serve, spoon into a bowl and sprinkle over the coconut flakes, cacao nibs and goji berries in neat lines to finish. Enjoy.

INGREDIENTS PREP 15 mins 2 cup almonds 12 cup desiccated coconut 12 cup coconut oil 6 tablespoons raw cacao 2 teaspoons vanilla bean extract 12 dates medjool, pitted SECOND SET OF INGREDIENTS 12 cup cashews, roughly chopped12 cup pistachios, roughly chopped12 cup cranberries METHOD 1. Line a square baking tray with baking paper. 2. Blitz base ingredients together in a food processor. 3. Add all nuts and blend to combine. 4. Press mix into lined baking tray and coat with desiccated coconut. Refrigerate and allow to set for up to 40 minutes before serving.
