13.01.2022 INGREDIENTS VANILLA CUPCAKES 2 1/2 cups (325g) all purpose flour 2 cups (414g) sugar... 3 tsp baking powder 1 tsp salt 1 cup (240ml) Kiewa Country Milk 1/2 cup (120ml) vegetable oil 1 tbsp vanilla extract 2 large eggs 1 cup (240ml) water VANILLA FROSTING 1/2 cup (112g) salted butter, room temperature 1/2 cup (95g) shortening 4 cups (460g) powdered sugar 1 1/2 tsp vanilla extract 23 tbsp (30-45ml) water or Kiewa Country milk INSTRUCTIONS 1. Preheat oven to 350F (176C) and prepare a cupcake pan with liners. 2. Add the flour, sugar, baking powder and salt to a large mixer bowl and combine. Set aside. 3. Add the milk, vegetable oil, vanilla extract and eggs to a medium sized bowl and combine. 4. Add the wet ingredients to the dry ingredients and beat until well combined. 5. Slowly add the water to the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined. Please note that the batter will be very thin. 6. Fill the cupcake liners about half way and bake for 15-17 minutes, or until a toothpick comes out with a few moist crumbs. 7. Remove the cupcakes from oven and allow to cool for 2 minutes, then remove to a cooling rack to finish cooling. 8. To make the frosting, combine the butter and shortening in a large mixer bowl and mix until smooth. 9. Add 2 cups of powdered sugar and mix until smooth. 10. Add the vanilla extract and 1 tablespoon of water or milk and mix until smooth. 11. Add remaining powdered sugar and mix until smooth. 12. Add remaining water or milk as needed and mix until smooth. 13. Pipe the frosting onto the cupcakes.

10.01.2022 INGREDIENTS Melted butter, to grease 270g (1 1/3 cups, firmly packed) brown sugar 185ml (3/4 cup) Kiewa Country milk 125g butter, cubed... 50g (1/2 cup) Cocoa 1/4 teaspoon bicarbonate of soda 150g (1 cup) self-raising flour 2 tablespoons plain flour 3 eggs, lightly whisked CHOCOLATE ICING 195g (11/4 cups) pure icing sugar 1 tablespoon Cocoa 10g (2 teaspoons) butter, at room temperature 1 tablespoon boiling water METHOD Step 1 Preheat oven to 160C. Brush a deep, square, 19cm (base measurement) cake pan (see tip below) with the melted butter to lightly grease. Line the base and sides of the pan with non-stick baking paper. Step 2 Place the sugar, milk and butter in a large saucepan. Use a fine sieve to sift the cocoa and bicarbonate of soda over the mixture. Place the pan over medium-low heat and use a whisk to stir until the mixture is smooth (don't boil the mixture). Remove the pan from the heat and set aside for 5 minutes to cool slightly. Step 3 Use a sieve to sift half of each the self-raising and plain flours into the pan. Use the whisk to stir until the mixture is smooth. Repeat with the remaining flours. Add the eggs and continue to stir until well combined. Step 4 Pour the mixture into the prepared cake pan and gently tap the pan on a bench to release any large air bubbles. Bake in preheated oven for 45-55 minutes or until a skewer inserted in the centre of the cake comes out clean. Set aside for 2 minutes before turning onto a wire rack. Set aside for 1 3/4 hours or until completely cool. Step 5 To make the chocolate icing, sift the icing sugar and cocoa into a medium bowl. Add the butter and water, and stir with a wooden spoon until smooth. Spread the icing evenly over the top of the cooled cake. Set aside for about 50 minutes or until the icing is firm.

08.01.2022 Hot milk Sponge cake Ingredients 1 cup Self- Rising flour 1 teaspoon baking powder... teaspoon salt 2 tablespoons unsalted butter cup HOT milk 2 eggs 1 cup sugar 1 teaspoon vanilla Instructions 1. Sift together flour, baking powder, and salt together. Add butter to milk keep hot. Beat eggs until thick and lemon coloured, about 3 minutes at high speed with mixer. Gradually add sugar, beating constantly at a medium speed 4 to 5 minutes. 2. Quickly add sifted dry ingredients to egg mixture stir just until blended. Stir in hot milk mixture and vanilla blend well. Pour into a paper-lined 20cm pan. Bake at 180 degrees for 25-30 minutes. Enjoy!
