But how do you make sure you're not compromising the meat when it comes time to dish it up? We recommend:... Large roast: 47 hours per 500g Small roast: 35 hours per 500g Steaks (3cm thick): Approximately 12 hours/overnight. Save the below image to your phone and reference later. Don't REfreeze (without cooking). It's potentially unsafe and it dries out your beef. Resting allows the natural meat juices to redistribute through the muscle, relaxing the meat fibres. Our tips: Remove beef from heat Place on a warm plate or serving platter Cover LOOSELY with foil. Too tightly and your meat will sweat. Don't lose that moisture! Rest for 1 minute for every 100g of meat. Resting times do depend on the size of your cut. We like to give a roast 1020 minutes rest before carving.
