25.01.2022 Healthy snacks ready for the day. Carrot sticks with my homemade guaca-mmus. Blend 1 can Coles organic chickpeas, 1 avocado, half a red capsicum, half a tomato, little splash of olive oil and then salt pepper and paprika/chili powder to taste.



25.01.2022 Make your own healthy gummy sweets. A friend and fan of Kimbo's Superfoods recently made this very clever recipe. It uses gelatin which has amino acids which can be great for gut health and skin, hair and nails.... Blend 1 cup frozen raspberries with the juice of 1 small freshly squeezed lemon. Add this mixture to a pan with 1/4 cup of grass-fed gelatin. Whisk over a low heat for 5-10 mins until everything is well mixed and becomes thin. Pour into moulds and place in the fridge for at least 1 hour. The recipe also calls for up to 3 tablespoons of honey but if your raspberries are sweet this may not be needed.

24.01.2022 Today I've been making some delicious healthy treats. The ones on top are my old favorite chocolate nut butter cups which I've published the recipe for previously. The ones on the bottom are a new experiment; nut butter protein fudge. They turned out really nice and I'm going to try some other variations too. These ones are just a mixed nut butter that I made in my food processor very gently warmed with coconut oil and some protein powder and a pinch of salt. ... 23.01.2022 DO YOU EVEN BLEND?! I think a lot of people do these days, but if you dont, theres a few good reasons to get started. Its a convenient and tasty way to get a lot of nutrients in. My post workout smoothies are a blend of protein powder, eggs, veggies, fruits, cacao and sometimes chia seeds or nuts etc along with some kind of milk. They are delicious and I look forward to drinking them the next morning which is another incentive to get up and train. Also green juices are a g...reat alternative to a mid avo sugar fix to keep you going at work. Theres so much variety thats its really only limited by your imagination. You can make soups, sauces, dressings, juices and smoothies with a good one. There are so many blenders on the market but my personal recommendation is the Omniblend as pictured here. This article obviously concentrates on the U.S., but Im sure much of it holds true for the rest of the world. As Ive posted previously, I believe that many of todays common maladies are very avoidable. 21.01.2022 So my Paleo challenge month is finished and here are my results. I got proper body composition analysis done which shows that over the month I lost 1.4 kgs overall, gained 0.5kg lean mass, and lost 2.7% bodyfat-went from 12 to 9.3% now. I do feel that I look leaner now at my best, but a little bit of bloating from eating or drinking water really dilutes the six pack! Ive really enjoyed the challenge and didnt find it too difficult. I basically just gave up rice, oats, ...cheese and yogurt and legumes. I also drank very little over the last month apart from a few Guinnesss on Paddys day. My energy has been slightly better and my digestion has been much better. I normally take a daily probiotic which I ran out of for over a week and still felt fine. I will be keeping it up mostly, apart from maybe this weekend. I will try re-introducing cheese slowly soon and monitor how it feels and maybe the odd burrito! I strongly believe in the methodology of Paleo-like eating for great health and I encourage you to give it a try. Bear in mind though, everyone is different and it may not suit you. 19.01.2022 Healthy snack bar??? Well from the front in the big print it certainly leads you to believe it is healthy. Unfortunately, once we read the ingredients in the small print on the back we can see that it certainly isnt. You have to be careful and know what youre looking for. This really annoys me as people with good intentions can easily be mislead if they dont know what theyre looking for. If you are not aware, ingredients are listed in the order of descending predominanc...e by weight. So rolled oats are the most predominant ingredient, and natural vanilla is the least. In between are far too many sugars along with gelling agents, emulsifier and corn syrup. I had a tiny bit and it tasted like a caramel slice. There are many similar products out there that masquerade as healthy. Will eating this bar kill you or make you fat? No. But if you ate it regularly it may do in time. 1 single cigarette wont hurt you much either! Take a bit of time to learn about ingredients and read them before you buy a product. 17.01.2022 Tonights dinner, and lunch prep for the week. Chicken, veggies, brown rice & lentils cooked in chicken stock along with my first attempt at homemade bbq sauce (thats the stuff that looks like strawberry mousse on the right of my plate!). Despite the appearance, Im pretty happy with it. Its spicy and sweet. Give it a try by throwing something like this in a high speed blender: 2 tomatoes 6 dates 1/2 apple 1/4 onion... 1 whole Birdseye chili salt & pepper tiny bit of water (I had to thicken mine a bit with some oats). 14.01.2022 I’ve recently made quite a change to my nutrition that I want to share with you. This wasn’t something planned but my body told me it needed it (cravings) and now I feel much better. I used to eat a pretty high fat diet with plenty of eggs, butter, coconut oil, nuts and avocados. I loved my fat coffee, or bulletproof coffee in the mornings and it would keep me feeling full for a good 3 hours. Bear in mind I have a very high metabolism. Over the Easter wkend I was a little s...ick, just a stomach upset thing. After this my high fat coffees in the morning stopped agreeing with me and I also had cravings for carbs (sugar to be honest). I gave into the cravings for a few days as I’m not super strict with my diet and started experimenting with changing my usual macronutrient split to something a little more moderate in fat and carbs rather than almost all fat, especially for my breakfasts. It worked. Now I am eating quite a bit more oats, rice, sweet potato and bananas than I used to and my energy is markedly improved in both daily activities and in training. This may come across as being rather obvious to many. There was a good reason that I ate a bit lower carb in the past; I got quite pronounced crashes even when I was consciously having protein, fat or fibre with my carbs to slow digestion. Now that’s changed and I feel great. I still always try to have a reasonable mix of all 3 macronutrients and I’ll have a solely carb meal or snack only if I’m really stuck. So the interesting thing about all this to me is not that carbs give me energy, that’s very obvious!! It’s that my body gave me signs like cravings for carbs and feeling yuck with super high fat meals and is now responding differently to the carbs. I have a feeling that this was probably a long time coming and that’s why I finally got a more obvious sign such as being sick. So what’s the takeaway message? It’s not eat more carbs. It’s experiment with yourself and your nutrition. We are all different and what works for me may not work for you. Something like the Zone principal for nutrition where each meal is balance with 40% carbs, 30% protein and 30% fat is a great base to start from. Weighing and measuring this exactly is too strict for me but at least being conscious of it and trying to eyeball it as best I can seems to be reaping benefits, and my body composition hasn't changed at all from what I can see. Don’t underestimate the massive power of nutrition. Be well and be awesome.

I was really happy with it and its packed with good stuff. Pour full fat coconut milk over about 3-4 tablespoons of chia seeds. Then stir in 1 tablespoon of cacao and a little shake of cinnamon and some maple syrup. Then put in the fridge for about half an hour, or even overnight. I garnished it with some shredded coconut and blueberries.

10.01.2022 Have you tried bulletproof coffee yet? I wasnt even a coffee drinker until about a month ago. This is my version, bulletproof mocha. Just mix 1 tbsp each of coconut oil, grass fed butter and cacao powder to your coffee. Its best done in a blender. The caffeine and high fat content combined give you great lasting energy and youll feel fuller for longer. The cacao adds a big hit of nutrients like magnesium, and anti-oxidants. 09.01.2022 Do you know your ABC's? I'm a huge fan of good nut butter and this is one of my favorites and is much healthier than peanut butter. Almond, Brazil, Cashew spread is delicious and a great way to get some good fats. I used to pay $10-12 for something similar but you can get this for only $7.95 thanks to Kimbo's Superfoods. 06.01.2022 HOW TO GAIN QUALITY MUSCLE. This post may be a little less popular with my usual readership but its something that can be difficult for some people, and we can all learn something from it. I made a proper attempt at this for the first time in my life a few weeks ago, and ultimately it actually worked, but it wasnt easy.... I used a nutrition/calorie tracker for the first time as I needed reminding to eat, as I was not always hungry. So I went at it eating approximately 1.5 times as much as I usually would, and after a little while I did put on some weight. It can be a kind of fun experiment as you get to eat possibly more of the "naughty" things that you wouldnt normally, but I learned that this came at a price. As with any nutrition protocol, preparation is the key, and I didnt prepare enough good quality food. So I ended up eating a lot more burgers and pizzas etc than I would normally. With these poorer quality carbs I gained a noticable amount of belly fat and really started losing the six pack. This was annoying, but worse than this was how I felt. In the last 3 weeks or so I really noticed myself feeling more tired and I couldnt recover as well after workouts. It took me a little while to figure out that it was probably all these grain/bread items that lead to this. When I cut them back again I felt much better and leaned up a bit more. The net result was about 1.5 kg gained that appears to be mostly in the upper half of my torso and I also got an unexpected 4kg personal best in my shoulder press. So overall, I was very happy. Im going at it again now and I will choose my calorie sources more carefully and hopefully will gain some decent muscle without the downsides. The important take away message from this, whatever your goal may be, is that you have to experiment with yourself. Everybody really is different. Wish me luck with new gains, and I wish you luck with whatever you are trying to achieve. :-)

06.01.2022 Its Paleo month for Kimbo. Ive never followed any particular diet before, although I have always thought that the Paleo style diet looked great. So this month, with the support of a group from my Crossfit box, I am finally giving it a red hot go. Thankfully its not a massive change for me as I wasnt eating the awful, commonly referred to as "standard Australian/American diet". So the major change for me has been cutting out all grains, which means mostly oats for me, and... all dairy. So no more cheese and yogurt. About 2 weeks in and Im finding it fine so far and cravings for stuff Im not supposed to eat are minimal. My main motivation for this is experimentation, I want to see what difference it makes, if any. I am also tracking body weight and composition, and am keenly noting how different I feel in terms of mood and energy. I will update you all at the end of the month with my findings and am happy to help with any questions you may have if youre interested in giving it a try yourself. 05.01.2022 Happy Easter everyone. Did you eat much chocolate over the weekend? How would you like a delicious and super healthy alternative thats so simple and quick to make? Today I tried a variation of my homemade chocolate that took about 3 minutes (plus hardening time).... Just mix 3 parts cacao powder, 2 parts coconut oil and 1 part maple syrup in a cup. I also mixed in shredded coconut. Then put into cupcake moulds and into the freezer for 5 minutes, or fridge for about 15. They are best kept in the fridge, if you dont eat them all in one sitting! 04.01.2022 HOW TO GAIN QUALITY MUSCLE. This post may be a little less popular with my usual readership but it's something that can be difficult for some people, and we can all learn something from it. I made a proper attempt at this for the first time in my life a few weeks ago, and ultimately it actually worked, but it wasn't easy.... I used a nutrition/calorie tracker for the first time as I needed reminding to eat, as I was not always hungry. So I went at it eating approximately 1.5 times as much as I usually would, and after a little while I did put on some weight. It can be a kind of fun experiment as you get to eat possibly more of the "naughty" things that you wouldn't normally, but I learned that this came at a price. As with any nutrition protocol, preparation is the key, and I didn't prepare enough good quality food. So I ended up eating a lot more burgers and pizzas etc than I would normally. With these poorer quality carbs I gained a noticable amount of belly fat and really started losing the six pack. This was annoying, but worse than this was how I felt. In the last 3 weeks or so I really noticed myself feeling more tired and I couldn't recover as well after workouts. It took me a little while to figure out that it was probably all these grain/bread items that lead to this. When I cut them back again I felt much better and leaned up a bit more. The net result was about 1.5 kg gained that appears to be mostly in the upper half of my torso and I also got an unexpected 4kg personal best in my shoulder press. So overall, I was very happy. I'm going at it again now and I will choose my calorie sources more carefully and hopefully will gain some decent muscle without the downsides. The important take away message from this, whatever your goal may be, is that you have to experiment with yourself. Everybody really is different. 03.01.2022 Do you know your ABCs? Im a huge fan of good nut butter and this is one of my favorites and is much healthier than peanut butter. Almond, Brazil, Cashew spread is delicious and a great way to get some good fats. I used to pay $10-12 for something similar but you can get this for only $7.95 thanks to Kimbos Superfoods. Try mixing it with cacao and coconut oil for a yummy high (good) fat dessert that doesnt even need any sweetener.

03.01.2022 I dont like taking any chemicals if I can help it so Im all for a natural alternative. I tried this recently when I was advised by my physio to take anti-inflammatories for a knee injury. Ive read a few articles about it and it certainly seemed to work for me. Blend pineapple (including the core), turmeric, ginger and aloe vera and drink liberally.
