18.01.2022 Our first apricots of the season Love the feeling of summer in the air and all the delicious fruits of this season! My absolute favourites are mangos, lychees, cherries and alllll the stone fruits. But then again anything in season and organically grown is usually pretty delish

17.01.2022 New recipe This is an adaption of your traditional coconut and jam slice although this one is Gf, Df & refined sugar free, so its a perfect little treat for school lunches. Otherwise, serve it warm and enjoy it with a dash of cream or yoghurt Blueberry and Coconut Slice Ingredients: ... Blueberry jam: 1 cup frozen blueberries 1 tsp vanilla 2 tbsp chia seeds 1 tbsp lemon juice 1 tbsp honey Biscuit base: 1 1/2 cups gf flour 3/4 cups desiccated coconut 1/2 cup melted coconut oil 1/3 cup maple syrup 1 tsp vanilla 1/2 tsp salt Coconut topping: 2 eggs 1 1/2 cups shredded coconut 1 tbsp maple syrup Pinch of salt 2 tbsp coconut oil Firstly, make the jam: Place the berries, honey, vanilla and lemon in a small saucepan and stir over a low heat until the berries have softened. Blend the mixture lightly, until just a few small lumps remain Thoroughly stir in chia seeds in four lots so that they don’t clump together Pour into a bowl and allow to thicken while you prepare the rest of the recipe. To make the slice: Preheat oven to 180 C fan-forced. Grease and line an 8 inch square baking tin with baking paper. In a large mixing bowl add all ingredients and mix well. Place mixture into the baking pan and press down to form one even layer. Bake in the oven for around 15 minutes or until the crust is slightly golden on the edges. Remove from oven. While the base is still warm, spread over jam to form one even thin layer. In a medium-sized mixing bowl add all the topping ingredients and stir through until well combined. Spread this coconut mixture over the jam. Bake in the oven for another 15 minutes or until topping turns golden brown. Remove from the oven and leave in pan to cool off. Cut into small slices and serve fresh. Store in the freezer to keep longer

17.01.2022 Such an easy and delicious breaky that the whole family loves Overnight Soaked Chia, Oats & Hemp seeds 1 cup whole organic rolled oats... 2 tbsp chia seeds 2 tbsp hemp seeds 1/2 cup filtered water or nut milk 1/2 cup organic apple juice 1 tsp of ground cinnamon 1/2 tsp ground nutmeg Place everything in bowl and stir until combined. Cover with a linen bowl cover then place in the fridge overnight. Serve with a dollop of coconut yoghurt, fresh blueberries, a spoonful of nut butter and drizzle of honey
