24.01.2022 When you get right amongst the big barrels, the smell of old bourbon and ageing spirit is incredible.

21.01.2022 It's possible to use new expensive technology to measure alcohol strength however we use the old system of alcometers, adjusted for temperature.



20.01.2022 Chyser Creek runs from our dam, past our neighbours and then through the bush, all the way down to the Whittlesea-Yea Road. An old wooden tramway used to run alongside in the early 1900's.

18.01.2022 Chocolate malt is what gives Guiness its black colour. We used it in our mash to give our whisky extra richness.

16.01.2022 Our first whisky release will be around 100 bottles and is available only to members of our Pioneers Club. There are 6 places left via the website. If you miss out, our first widely available whisky will be ready around Christmas or shortly after. This is available to pre-order on website too.

16.01.2022 This mill was originally meant to grind grain for animal feed. It also works well cracking the malt used for our whisky!

14.01.2022 Not long now! The first widely available Kinglake whisky ‘O’grady’s Stand’ is coming soon, hopefully by Christmas or shortly after. Our short, squat still, deep cuts into the feints and slightly smoky, chocolatey mash bill means this will be a nice rich whisky. The beautiful little 50-litre octave casks we’ve had specially made give it a depth well beyond its years. We’d love to make some early sales, if anyone would like to pre-order we’ll send it out postage free when its... ready. 13.01.2022 It’s been a long, frustrating and embarrassing wait for our first whisky to become fully available however finally, after 6 months, we’re almost there. The issues with our first batch have not only given us some grey hairs but also highlighted how much we are learning as we go along. The final twist is that the first batch we thought was ruined is actually not. Some of the most respected whisky experts in Australia have tasted it and think it’s not only ok but actually even b...etter than the new first release batch we replaced it with! So, what does that mean? Well, reassuringly, I wasn’t stupid enough to ruin great whisky at the final hurdle. Less re-assuring is that my sense of taste was well and truly befuddled by something. I have since learnt how many factors can throw your taste way off and it’s going to be something I need to work on. The result is that we will be bottling both batches next week and they will be available side by side. The rest of the first release (OG1) at bottle strength of 46% and also the false start batch (now OG2). We’d love to know which people enjoy more. With that, I hope we can end this very embarrassing bump in the road and morph into one of the most reliable small-scale whisky producers in Australia. Thanks for bearing with us!

13.01.2022 There's a few more than that in there now. Black is ex-bourbon, Green ex-port and Red ex-apera (Australian sherry).

12.01.2022 Finally, we're ready! First bottle strength releases, available (exclusively for the moment) via the best bottle-o in town.

11.01.2022 We take very deep cuts with our whisky because we are aiming for an oily viscous lingering mouth feel!

11.01.2022 The next barrels to be filled are an interesting bunch. A redgum that has been full of Moondog Stout for the last 12-18 months. Two 100l fortified barrels, one sherry, one port, both re-coopered from full-size barrels over 30 years old.... A Laphroaig single malt barrel. Casks that previously held single malt are likely exhausted so this will have to be a long-term project...just couldn't turn-down a barrel from one of my fav scotches.

02.01.2022 This plate heat exchange cools down our wort so that we can pitch our yeast. Too hot and the yeast overheats and dies. :(
