23.01.2022 Breakfast . I didn't say it had to look good . Beef stew with quinoa ... . Always pre soak the quinoa, preferably overnight. This makes it easier to digest. . Slow cooked meals like stews are great for the digestive system, soft foods that are already partly broken down are easier to digest, and the nutrients easier to absorb. . Add warming spices, like ginger, cinnamon and black pepper, cook with bone broth for added gut benefits. See more



19.01.2022 Tray bake chilli free coconut curry . The next instalment of "ugly food that tastes great!" . I was sceptical about this, but also in a hurry. And it worked. So here's what I did.... . Chopped about 12 chicken thighs into 3 (I like leftovers). Chopped 2 zucchinis, 2 onions, 1 head of broccoli, 5 garlic cloves, grated 1 knob of ginger, 2 handfuls of mushrooms, put into an oven tray. . Poured on 2 cans of Ayams coconut cream, plus 1/2 can water. Added 5 kaffir lime leaves, good shake of turmeric, about 8 cloves, 5 cardamom pods, sprinkle of cumin seeds, and a good shake of coriander seed (I obviously didn't measure the spices, I dont think you can go too far wrong). . Also a good shake of coconut aminos and about half the amount of red boat fish sauce. Some salt. . Give it a good stir, and out in the oven on 180 for about....30 mins or so? Depends on your oven. But basically make sure the chicken is cooked. . Give another good stir before serving. We had it with presoaked quinoa. . They are only around for a limited time, offering their unique set of nutrients. A little gift to our gut gods! ... . 07.01.2022 Preschool lunch/ picnic . When I accidentally packed Woody's preschool lunch a day early , we decided to make it a picnic! . We have beautiful parks nearby, and the autumn weather is gorgeous, so we're taking advantage of it ... . We had: cucumber and carrot sticks, cherry tomatoes (these are always in his packed lunch), hass avocado (which doesn't go brown), @marysgonecrackers, sweet potato rounds (these were extra for Iris and I) and Snowy Mountains smoked trout (usually I'd give Woody 1/3 to 1/2, but we took the whole pack for all of us).
