25.01.2022 Moroccan Vegetable Stew OR Moroccan Lamb Stew....both with Chickpeas, Rhubarb & Sumac The vegetable stew is made from young carrots, fennel and snow peas cooked very slowly in vegetable stock with Moroccan spices and chickpeas to give a rich stew. Its a slow cooked dish traditionally made with chicken or rabbit and cooked with tomatoes, mushroom, herbs and wine. We use free range chicken thighs for as they remain moist on the bone, instead of breast which cooks dry and stringy when cooked in a stew. 21.01.2022 Our Twice Baked Goat's Cheese Soufflé with Rosemary Cream and Chicken Liver Pate are both light as a feather and perfect for a starter or a small meal. The goat’s cheese is whisked with milk and eggs and baked in a crust of breadcrumbs to form the soufflé. We love the way it swells back up when baked in the bubbling rosemary cream. Chicken Liver Pate OR Vegan Mushroom, Macadamia & Juniper Pate... For our Chicken Liver Pate, the chicken livers are sautéed with garlic and shallots, flambéed with sherry and blended smooth with Mike's favourite charcuterie spices of white pepper, cloves, cinnamon and nutmeg. I spent over 10 years working in Europe, and true French cooking adheres to the seasons, and allows the produce to shine. Our new Beetroot Bourguignon is the perfect swap for beef in this vegan version of the French Classic. Red and golden beets are cooked slowly in red wine with mushrooms, root vegetables and herbs. 18.01.2022 I love the sunshine of Spanish cooking and Paella is probably the most famous dish of all. This very simple vegan version is made by cooking calaspara rice (short grain) with saffron, vegetable stock, intensely dried tomatoes, olives and broad beans. Its a perfect meal on its own with a squeeze of lemon or keep it as the champion and serve with a green salad and some Spanish inspired salads. It also plays second fiddle very well as a side to our #KBMatHome Jerk Chicken an...d also to most of the slow cooked stews, my favourite teaming is with chicken cacciatore. 18.01.2022 Marinated Whole Free Range Chicken in Verjus and Thyme This foolproof roast chicken recipe will colour caramel brown with the light perfume of thyme. Its delicious tricked up by throwing a handful of grapes, walnuts and tarragon leaves into the pan 5-10 mins before you remove the chook from the oven. Slices of eggplant and zucchini are salted to remove their bitterness and excess water. My mate Luke Kohler surprised me with a mystery box of seasonal and local produce that I had 10 minutes to rustle up two tasty dishes. Using local tomatoes and an abundance of spring fruit and vegetables, I opted to poach some asparagus with green garlic, soft boiled eggs and anchoiade. This very simple vegan version is made by cooking calaspara rice (short grain) with saffron, vegetable stock, intensely dried tomatoes, olives and broad beans.
