01.01.2022 Where have the first few months of the year gone? I can't believe it's Easter already!!! So what's Easter to you? One thing that comes to mind is CHOCOLATE. So here it is, some yummy chocolate coconut cupcakes with edible carrot tops. Recipe below. #kitcheninkau . . Chocolate coconut cupcakes with cute carrots... Prep: 40 mins Cooking: 20 mins Makes: 12 2/3 cup firmly packed light brown sugar 1/4 cup cocoa powder 1/2 cup self-raising flour 1/2 cup plain flour 1/3 cup desiccated coconut 125g butter, melted, cooled 1 egg 1/3 cup milk 1 cup chocolate sprinkles, approximately, to decorate orange and green fondant, to decorate CHOCOLATE BUTTERCREAM 100g butter, at room temperature 3/4 cup icing sugar 2 tablespoons cocoa powder 1 tablespoon milk 1 Preheat oven to 180C or 160C fan-forced. Line a 12-hole (1/3 cup capacity) muffin pan with foil or paper cases. 2 Sift brown sugar, cocoa and flours into a medium bowl. Stir in coconut, butter, egg and milk. Divide mixture among prepared pan holes. Bake about 18-20 minutes or until a skewer inserted into one cake comes out clean. Stand for 5 minutes before transferring to a wire rack to cool completely. 3 Meanwhile, using an electric mixer, beat butter until creamy and pale. Sift icing sugar and cocoa over butter. Beat on low speed until combined. Add milk and beat until smooth and combined. 4 Using a cupcake cutter, apple corer or small knife, cut a small round from the centre of each cupcake. Spread buttercream over cake tops. Place sprinkles in a bowl. Dip cakes into sprinkles to lightly coat. 5 Using picture as a guide, make little carrots and green tops from fondant. Place carrots into rounds on cupcake tops. Serve.
