23.01.2022 #INDULGEATHOME | Prawn Laksa; another delicious dish to enjoy at home with loved ones. Executive Chef Stephen Lech shares his adapted Kitchens on Kent recipe with us. Enjoy! #KitchensonKent #ExperienceIndulgeCelebrate INGREDIENTS (serves 2)... 1 tbsp vegetable oil 1 red chilli, finely sliced 20g ginger crushed 10g garlic crushed 2 tbsp Laksa paste 800ml Fish stock 400ml coconut milk 100ml coconut cream 2 tsp fish sauce 1 tsp palm sugar 1 kaffir lime leaf 100g rice vermicelli noodles 2 limes, juice of 1, the other halved 150g cooked king prawns bunch coriander, roughly chopped METHOD 1. Heat the vegetable oil in a saucepan. Add about 100ml of coconut cream. Bring to a high heat and cook the cream until it splits and the natural oils are released. 2. Add the chopped chilli, laksa paste, garlic and ginger then cook until fragrant. Add the coconut, fish stock and kaffir lime leaf then bring to the simmer. Slowly reduce until desired consistency. 3. Add the fish sauce, palm sugar and lime juice to adjust seasoning. 4. Add prawns, vermicelli noodles and chopped coriander. 5. Serve in bowls with the remaining coriander and lime wedges on top for squeezing over.
