25.01.2022 Weekend baking project ... homemade seedy crackers. These are delicious served alongside a cheese platter or spread with nut butter or butter and vegemite. Once you've tried these you'll be making them regularly. Happy baking 2 tbsp (30g) black chia seeds 2 tbsp (35g) linseeds... 1/2 cup warm water 2/3 cup (100g) wholemeal spelt flour 2/3 cup (100g) white flour 1 tsp sea salt flakes 1/3 cup (65g) pepitas (pumpkin seeds) 1/3 cup (50g) sunflower kernels 2 tbsp (30g) sesame seeds 1 egg 1/3 cup olive oil sea salt flakes to sprinkle, or za'atar or dukkah 1. Preheat the oven to 180C. 2. Combine the chia seeds, linseeds and water in a medium bowl, then set aside to soak for 15 minutes, stirring occasionally. 3. Add the remaining ingredients and mix until well combined. You may find using your hands is the best way to bring the dough together. Divide the dough into 2 portions. 4. Roll each portion of dough between 2 sheets of baking paper into a rectangle of approximately 20 x 30cm, and about 5mm thick. Keeping the dough on the paper transfer it to a baking tray. Peel off the top layer of paper and sprinkle with some extra sea salt flakes (or za'atar or dukkah). Use your rolling pin to gently press these into the dough. Repeat with the other portion of dough. 5. Bake for about 18 to 20 minutes or until lightly golden and crisp. Cool on trays, then break into pieces. Store in an airtight container. The gluten-free option is made with Australian grown chickpea flour, water and love - it’s high in protein and absolutely delicious! 17.01.2022 Chia pudding is so easy to make and is delicious for breakfast or dessert with seasonal fruit. Here’s how you make it 2 tbsp chia seeds... 1/2 cup yoghurt (coconut or dairy) 1/2 cup water 1 tbsp maple syrup 1 tsp vanilla paste 1 tsp grated ginger, optional Method: combine everything in a bowl or clip-lock jar, give it a stir, cover and pop it in the fridge for a few hours or overnight. To serve: place some in a serving bowl, top with your favourite fruit and granola for crunch. Our favourite granola is @tuvas.kitchen , available in-store and online.
